“…After that, the hydrolysis reactions followed a linear trend until the end of each experiment, the result of either a limitation on the available cutting sites, enzyme denaturation and/or product inhibition [ 74 ]. These results were similar to those reported for Stichopus horrens [ 123 ], Actinopyga lecanora [ 126 ], and Isostichopus badionotus [ 17 ].…”

“…Among marine benthic invertebrates, Holothurians (commonly known as sea cucumbers) have received particular attention due to the presence of biomolecules that have health benefits such as: (1) chondroitin sulfates [ 4 ]; (2) fucan sulfates [ 5 ]; (3) polysaccharides [ 6 ]; (4) triterpene glycosides (saponins) [ 7 ]. These four biomolecule types have applications in the pharmaceutical industry due to their broad panel of bioactivities, such as antibacterial, antifungal, antiprotozoal, anti-inflammatory, anticoagulant, antitumor, antioxidant, and antiviral activities [ 8 , 9 , 10 ]; (5) long-chain polyunsaturated fatty acids (PUFAs) that play an essential role in metabolic activities [ 11 ], coronary heart diseases, arthritis, wound healing, and blood clotting [ 12 , 13 , 14 ], and (6) peptides [ 15 ] which exhibit angiotensin-converting enzyme (ACE) inhibition [ 16 , 17 , 18 ]. Peptides’ biological activities decrease sometimes due to digestion or poor absorption [ 19 , 20 ].…”

“…In another study, Alcalase/Protease produced peptides with angiotensin I-converting enzyme inhibitory activity from skate (Okamejei kenojei) skin gelatin, which were able to reduce the systolic blood pressure in spontaneously hypertensive rats [542]. Also, pepsinpancreatin and Alcalase-Flavorzyme sequential systems were used to prepare hydrolysates with angiotensin I-converting enzyme inhibitory capacity from sea cucumber (Isostichopus badionotus) [543]. It was found that the Alcalase-Flavourzyme system produced hydrolysates with the highest degree of hydrolyses and angiotensin I-converting enzyme inhibitory action (86%) [543].…”

“…Additionally, enzymatic activity can be protected and enzymatic hydrolysis efficiency improved by removing fat (using organic reagents like ethanol), 6 heavy metals (using EDTA), 26 and salts (by dialysis). 30 In the process of enzymatic hydrolysis, enzyme type plays a key role in the preparation of SCP as it determines the optimal temperature and pH on the basis of the bioactivity requirements. The generation of SCP by enzymatic hydrolysis includes in vivo digestion and in vitro production.…”
