It is appreciated in the food industry due to their high protein content, high nutritional value, and various bioactivity such as antidiabetic, antihyperlipidemic, and antioxidant (Ben Slama‐Ben Salem, Bkhairia, Abdelhedi, & Nasri, 2017; Ben Slama‐Ben Salem et al., 2018alem et al., 2018; Tapia‐Vasquez et al., 2020).
