Quality Characteristics of Rice Makgeolli Prepared by Mashing Types

Abstract: Six different mashing types ((A) koji+purified enzyme, (B) koji+crude enzyme, (C) koji+nuruk, (D) koji+purified enzyme+nuruk, (E) koji+crude enzyme+nuruk, (F) purified enzyme+nuruk) had been established, according to fermentation agents and a mixing rate of rice makgeolli, in this study. The alcohol content was the highest in the mashing type (C), which was 13.6%, followed by (D) 13.5%, (A) 13.1%, (B) 12.9%, (E) 12.7% and (F) 12.1%. The reducing sugar content of (A) was the highest with 401.6 mg% and those of … Show more

“…Thus, isolation of pure valine from protein hydrolysates is relatively difficult. Valine protects liver function and has a slightly bitter taste in addition to a sweet taste [ 30 ]. On the eighth day of fermentation, the concentration of valine was 106.67 µg/mL.…”

“…Cheese whey has been used to produce acetic acid by several researchers. In one of these studies, cheese whey supplemented with lactose was first fermented with the yeast Kluyveromyces fragilis and then by Acetobacter pasteurianus to obtain 6% (v/v) acetic acid with a biotransformation efficiency of 84% [126,127]. In another study, acetic acid and propylene glycol from whey lactose were produced by fermenting it with Lactobacillus buchneri at pH ~4.2, and concentrations up to 25-30 g/L were achieved [128].…”

“…알코올성분 분석은 참외 무증자 쌀막걸리 발효액을 0.45 μm membrane filter로 여과하여 국세청 주류분석규정에 따 라 Hewlett packard gas chromatography(5890, Hewlett packard Co., Palo Alto, CA, USA)를 이용하여 분석하였다(24).이때 사용한 column(19091N-233 HP-INNOWAX, 30 m×0.25mm×0.5, Agilent Technologies Co., Ltd., Santa Clara, California, USA)을 이용하였으며 carrier gas는 N2(flow rate 1 mL/min)를 사용하였다. GC oven 온도 program은 40℃에 서 2분간 유지 후 분당 2℃ 승온하여 130℃에서 1분간 유지 하였으며 detector는 FID, injector temperature은 250℃, detector temperature 260℃로 설정하였다.…”
