Shelf Life and Clostridium botulinum Toxin Development during Storage of Modified Atmosphere‐packaged Fresh Catfish Fillets

Abstract: Shelf life (onset of sensory spoilage) and potential for toxin production by Clostridium botulinum type E in retail type packages of fresh catfish fillets in high barrier film were investigated under selected atmospheres when stored under refrigeration and temperature-abuse conditions. Shelf life of fillets in all atmospheres decreased with increase of storage temperature from 4ЊC to 16ЊC. Trimethylamine content associated with onset of spoilage was different for each storage temperature and atmosphere. Surfac… Show more

“…The efects of MAP on seafood have been reviewed extensively (Boknaes et al, 2002;Cann et al, 1983;Chen et al, 2003;Davis, 1993;Fagan et al, 2004;Farber, 1991;Goulas, 2007;Goulas and Kontominas, 2006;Goulas and Kontominas, M.G., 2007;Masniyom et al, 2002;Metin et al, 2002;Özoğul et al, 2000;Özoğul et al, 2004;Reddy et al,1997;Pastoriza et al, 1998); Sivertsvik et al, 2002;Stammen et al, 1990) but limited information exists regarding the some quality criteria and histamine production in cold storaged marinated anchovies under VP and MAP conditions. This study was performed to determine the effects of VP and MAP by different gas mixtures on the potential quality index, shelf-life and histamine formation in marinated anchovies during the storage at 2±2°C.…”

“…Changes in the composition of headspace gases are attributable to postmortem metabolic and microbial processes. In similar studies, O 2 concentrations dramatically decreased in tilapia fillets (23), aquacultured salmon (26), pond-raised catfish (24), and cod (25). Headspace CO 2 concentrations increased from Ͻ1.0 to Ͼ15.0% at the time of spoilage in all four studies.…”
