Stabilization of Beef Meat by a New Active Packaging Containing Natural Antioxidants

Abstract: A new antioxidant active packaging material for food has been designed and developed, consisting of a polypropylene film in which some natural antioxidants have been immobilized. The antioxidant properties of the new material have been tested by using both pure myoglobin and fresh beef steaks. Two different cell configurations (glass vial and Petri dish) and four different myoglobin concentrations-according to the common content of this compound in fresh meat and meat derivatives (1080, 1995, 3332, and 4414 mi… Show more

“…Studies carried out under model system with Mb solution showed a clear protection behaviour against oxidation provided by the active films (manner dependent of concentration) (Nerín et al 2006). The active film containing the highest concentration of oregano was the less efficient against oxidation during all of the experimental series.…”

“…It is interesting to make positive use of such an interaction to ensure a sustained delivery of an active substance such as the antioxidant into the food stuff. In that aim, active packaging is now increasingly used as a reservoir for active substance delivery [34][35][36][37], complementing other techniques such as modified atmosphere packaging [38], edible coating [39,40] or oxygen scavengers [41,42].…”
