“…Tartaric acid (TA), an important diprotic C 4 -based organic acid, is widely used in pharmaceutical and cosmetic industries. TA is also often applied as a sour agent in the food industry and a resolving agent in the synthesis of bioactive molecules. , In nature, TA exists in a variety of fruits (e.g., grapes). It can be obtained through various biological and chemical processes (Figure ). , Traditionally, it was obtained as a crude solid byproduct from wine fermentation. , The productivity and quality were strongly influenced by the growth of grapes and climatic conditions .
