The Determination of Listeria monocytogenes in Foods with Optical Biosensors

Abstract: Listeria monocytogenes is a food-borne intracellular pathogen that is resistant to adverse conditions of food processing and is a causative agent of high mortality listeriosis disease. Analysis of large food lots is limited by culture methods. Nowadays, although the conventional culture methods have been adopted as the gold standard method, they can be insufficient to control food parties that reach very large quantities. Biosensors with on-site detection potential and their characterizing with high accuracy a… Show more

“…The electronic or optical signal generated by biosensors are measured and recorded in proportion to the specific biological interaction between the analyte and the recognition molecule (Turner, 2000 ). Using biosensors, several different targets can be detected, from small molecular weight proteins to bacterial cells (Bìberoğlu, 2020 ).…”

“…However, compared with traditional optical biosensor schemes, the SPR biosensor has many obvious and unique advantages, such as high sensitivity, real-time detection, easy penetration and no loss [ 20 , 21 ]. Therefore, SPR sensing technology has been widely used in biochemical analysis [ 22 ], food safety [ 23 ], medical diagnosis [ 24 ] and other fields with remarkable effects, such as the detection of staphylococcal enterotoxin in milk [ 25 ], drug residue detection [ 26 , 27 ], real-time disease diagnosis [ 28 ], gas detection [ 29 ], etc. However, the traditional SPR structure usually uses Otto structure or Kretschmann–Raether (KR) structure based on noble metals (such as Au [ 30 ], Ag [ 31 ], Al [ 32 ], etc.)…”
