Bickford (19) reported that deaeration of fresh soybean oil aided in prevention of the development of rancidity when the oils were exposed to light; however, deaeration was accomplished by use of an oil pump and a mercury diffusion pump for a total of 6 hours and the oil stored in sealed glass vials under vacuum, a procedure not practical in industry. Sundberg and Hultberg (20) reported that removal of oxygen from fat in closed containers aided in protecting it against the accelerating effect of visible and ultraviolet light.…”
