Towards the systematic design of multilayer O/W emulsions with tannic acid as an interfacial antioxidant

Abstract: Three-step method optimizes multilayer emulsion for maximum tannic acid (TA) amount at surfaces. (1) TA–emulsifier bulk interactions assessed. (2) LbL films built for optimal TA presence. (3) Emulsions built as per LbL design and TA action evaluated.

“…50 However, when the BSA−TA non-covalent complex was used as the first layer, the stability of flaxseed oil emulsions decreased as a result of the deleterious emulsifying properties of BSA. 51 Interesting, when TA was introduced in the second layer (emulsions with layers of emulsifiers), the emulsion possessed the highest oxidative stability, but the mechanism is not clear now. Besides, the precise quantification of the interfacial concentration of polyphenols in multilayer emulsions is still not implemented in current studies.…”

“…It was mainly due to the higher portioning of polyphenols on the outer layer and the improvement of interface repulsion between adjacent droplets . “…Other types of delivery systems (e.g., emulsion and MOFs) have also shown the ability to deliver oxidative modulators. To our knowledge, studies have encapsulate different antioxidants using emulsions, such as conventional oil-in-water (O/W) emulsions [66], Pickering emulsions [67], and nano emulsions [68]. The characteristics of the emulsion are critical to the delivery of oxidation regulators, among which the loading efficiency, emulsion droplets size, and stability need to be considered [66].…”

Another type of delivery system MOF is an organicinorganic hybrid material with intramolecular pores formed by self-assembly of organic ligands and inorganic metal ions or metal ion clusters through coordination bonds [69].…”

“…UV-Vis spectroscopy and Polarization Modulation Infrared Reflection-Absorption Spectroscopy (PM-IRRAS) helped to determine the best position of the components (Bovine Serum Albumin-BSA, Tannic Acid-TA, chitosan and pectin) in the design of a multilayer O/W emulsion. UV-Vis and PM-IRRAS spectral measurements were employed to evaluate protein/polysaccharide multilayer arrangement on a solid surface [161].…”
