Valorization of Local Legumes and Nuts as Key Components of the Mediterranean Diet

Abstract: Legumes and nuts are components of high importance in the diet of many countries, mainly those in the Mediterranean region. They are also very versatile and culturally diverse foods found all over the world, acting as a basic protein source in certain countries. Their genetic diversity is needed to sustain the food supply and security for humans and livestock, especially because of the current loss of habitats, species, and genetic diversity worldwide, but also because of the ever present need to feed the incr… Show more

“…In this context, and because of the low consumption of foods such as milk and dairy products, fruit, and vegetables observed in our study, it could be hypothesized that some toddlers could also have an inadequate intake of some vitamins and minerals. Similar to the ALSALMA study [16], in our analysis we also found a lower follow-up of correct feeding habits in older children perhaps due to the greater autonomy of the child when choosing the food they eat or less pressure from the parents in establishing an adequate frequency in the different food group consumption.…”

“…Interestingly, almost 90% of children were offered fish at an appropriate frequency, in contrast with the aforementioned Spanish study, which revealed excess consumption of meat, fish, and sugar-free food [15], and nearly 80% had an adequate intake of pulses. Despite their healthy nutritional value [16], the intake of nuts was not considered in our survey as their rate of consumption among the studied population was so low, likely due to the choking risk in children younger than three years old.…”

“…They are considered high-protein, sustainable, very versatile, and culturally diverse foods found all over the world. The versatility of legumes covers a wide range of possibilities through their use in plant-based dairy analogs and plant-based flours, providing alternative protein and maximal amounts of nutrients and bioactive compounds [86]. In the MD, legumes are a healthy plant protein that should be considered as a meat alternative (more than two servings per week).…”

“…The interest in legumes can be linked to various factors, such as the trends towards healthy, well‐balanced diets and gluten‐free foods, awareness of sustainable agriculture practices and plant‐based diets (Garrido‐Galand et al ., 2021; Singh et al ., 2021). Some statistics were presented on the cultivation of local legumes and nuts in the Mediterranean region, emphasising the urgency to support their production and consumption due to their low demanding agricultural practices and beneficial nutritional aspects (Hernández‐López et al ., 2022). Another research reported that legumes and nuts are the crops with lower greenhouse gas emissions (Semba et al ., 2021).…”
