Ver�nderungen der Kuhmilchproteine unter Hitzeeinwirkung

Abstract: In einer vorausgehenden Studie wurden physiko-chemisehe Untersuchungen fiber die ~nderung der Zustandsform yon Kuhmilchproteinen durch P~steurisieren, Koehen und bei der Herstellung evaporierter (ev.) Milch mitgeteflt. Die Frage der Ni~hrwertminderung yon Kuhmilehproteinen durch Koehen und Pasteurisieren kann im folgenden an Hand der Literatur befriedigend beantwortet werden.
