“…The pre-slaughter handling of animals has an important effect on the quality of meat as well as implications for animal welfare (Warriss, 1993;Gregory, 1996;Goddard, 1998). When animals are subjected to stress, their muscle glycogen stores can become depleted, which will result in high ultimate pH values in the meat (DFD).…”

“…Replenishment does not occur quite so readily in the muscles of ruminants because of the special ruminant carbohydrate metabolism, which has little direct access to dietary glucose and must rely on gluconeogenesis, in particular from propionate (Lister, 1989). High ultimate pH values in meat from ruminants (beef cattle, reindeer (Rangifer tarandus tarandus), red deer and fallow deer) have been related to pre-slaughter handling stress (Malmfors et al, 1983;Warriss et al, 1984;Warriss, 1990;Wiklund, 1996;Pollard et al, 1999) and poor nutritional status of the animals (Gregory, 1996;Wiklund et al, 1996;Pollard et al, 1999). Generally though, there is very limited basic information available on glycogen levels and metabolism in muscles and implications for meat quality for game animals like deer.…”

“…A head or neck shot normally results in the animals dropping instantly, whilst a shoulder or rib shot could result in the animals running substantial distances before dying (von La Chevallerie & van Zyl, 1971). The latter is unacceptable from a meat quality perspective (Gregory, 1996;Issanchou, 1996).…”

“…Within South Africa, venison is normally perceived to be a dark unattractive red colour, somewhat similar to beef that has been classified as dark firm and dry (DFD) (Scanga et al, 1998). This phenomenon is normally associated with ante-mortem stress which causes muscle glycogen depletion and thus increases the risk of a high ultimate pH (Gregory, 1996;Scanga et al, 1998) and therefore the likelihood of the meat spoiling, pathogens proliferating and of the meat being unacceptably dark in colour (Gill & Reichel, 1989).…”
