“…For example, almond β‐glucosidase requires a w of 0.4–0.5 for catalyzing an in vivo transglycosylation reaction with short chain alcohols (C3) and a w 0.67–0.8 for higher chain alcohols (C8; Van Rantwijk, Woudenberg‐van Oosterom, & Sheldon, ; Wu, Miao, & Fan, ). Also, the β‐glucosidase of P. etchellsii requires high water activity for generating octyl‐glucoside via a whole‐cell production system (Rather, Mishra, & Chand, ). To that end, we tested the in vitro formation of ethyl‐β‐ d ‐glucoside with different concentrations of ethanol as a glucosyl accepter.…”

“…The optimal water content for the highest 1-hexyl glucoside, 1-octyl glucoside, and 1-decyl glucoside were 10, 15, and 20 % (v/v). Some studies had reported that the water content should be between 4 and 20 % (v/v) depending on the catalyst and the alcohol used to achieve a high yield of alkyl polyglucoside [5,10]. The figure also showed that the APG yield decreased when the water content kept going on.…”

“…This analysis indicated the presence and accessibility of a variety of a-and b-glucosidase activity with whole cells that can be used in biotransformation activities. Such activities have been reported to be used for synthesis of alkyl a-glucosidases [18], alkyl b-glucosides [19] and gluco-oligosaccharides [20] using different bacterial and yeast systems. Since the objective of the present study was to synthesize GOS, lactose was used as a substrate.…”
