The object of the study of the present work is to establish the dependence of the ratios of recipe components and the parameters of production of a new type of meat product. The solution of the problem of creating a model formulation of a meat product containing a functional composite mixture with a significant content of dietary fiber is presented. The study was aimed at creating mathematical support, which can be used as a basis in assessing the component composition and parameters of preparing meat semi-finished products with specified structural and technological characteristics. During the work, peculiarities of the process of preparation of meat semi-finished products using a composite mixture of non-traditional vegetable raw materials were revealed. The mathematical model was developed, reflecting dependence of quality indices of finished meat semi-finished products on quantity of composite components in formula and conditions of the preparation process. Optimal dosages of composite mixture and values of preparation parameters are determined. A comprehensive approach was used to study the mechanisms of formation of structural and technological effects in ready-made meat systems under different conditions of their production process. The main result of the work is a model describing nonlinear dependencies of the structural parameters of the meat semi-finished product (moisture binding capacity and moisture retaining capacity), technological indices (mince yield and mince color) on the production process conditions (temperature). The authors have analysed dosages of the components of the composite mixture introduced in order to improve not only the physical properties of the meat product, but also the macro- and micronutrients enriching it.
The modern educational system has passed the active phase of computerization and informatisation. Humanity has entered to the era of digitalization. The information component in politics and economics is in the process of strengthening in the modern world. Digital economy is not only the foundation for creating new business models, the nature of doing business, its manageability and flexibility, qualitative changes in business models, but also it affects the fundamental foundations of civilization. Due to the trend towards digitalization of the economy, the requirements for the level of education at universities are increasing significantly. The article discusses the construction of individual educational trajectories of students, the development of integration projects "schooluniversityenterprise", as a result of which we will get a modern system of professional self-determination of students and the development of potential teachers for the "digital university". The article explores the changes that digitalization of the economy makes in the cultural and educational sphere of human life. The authors concluded that Russia has all the necessary prerequisites for the further implementation of digital acceleration and the potential for digitalization of the economy. New technologies will have a great impact on the development of state and business administration, the growth of the quality of life, the emergence of new forms of people's socialization, their skills and communication culture. Russia has the necessary scientific and intellectual base. There are many original technological solutions for making an effective infrastructure of digital economy.
Modern interactive training tools can be used in training of forestry specialists. The presented article contains evidence of the need to improve the efficiency of the development of computer interactive tools based on specialized mathematical models, action algorithms and software tools that enables to create of scenarios for the development of various situations, to evaluate solutions for choosing methods and means of eliminating problems arising from the operation of feller buncher equipment. Six stages of developing an interactive training system are defined, each of which enables to solve several tasks to describe the training course presented in the game context on three levels-logical, extended and physical. A comparative characteristic of modern tools for developing an interactive learning system is presented. The main drawbacks of these development technologies include the difficulties that arise when the development environment is expanded, as well as the need to write a large amount of the program code of training medium and its script. The concept of quality control of training in the training of logging specialists is singled out, as the balance and integrity of the perception of the script and teaching elements. The article proposes an adaptive method that involves the use of two models of implementation: the model of the learner and the model of the course of knowledge. The learning process involves interaction of a developer of the computer learning material and a learner, each of which corresponds to a certain control loop of the learning process. A model is proposed that allows to carry out the analysis in the course of the work of the learning system that determines the parameters of the learner in order to manage the quality of his/her teaching and, accordingly, to change the sequence of studying the necessary teaching materials. As a result, software tools have been created to develop interactive training tools used in training forestry specialists.
