A educação alimentar e nutricional é vista como uma estratégia para promoção de hábitos alimentares saudáveis e acredita-se que a escola seja um espaço apropriado para desenvolver essas ações. Objetivou-se descrever e analisar o panorama da publicação científica sobre estudos de intervenção no campo da educação alimentar e nutricional em escolares no Brasil. Realizou-se uma revisão de literatura na qual foram selecionados artigos publicados entre 2000 e 2011. Observou-se que, apesar da relevância do tema, há um baixo número de publicações na área e que a maior parte foi publicada a partir de 2009. Os resultados apontados foram melhora no conhecimento em nutrição e nas opções alimentares. Entretanto, a maioria dos estudos que realizou avaliação antropométrica não encontrou mudanças no estado nutricional. Soma-se que os estudos optaram por metodologias baseadas nos estudos epidemiológicos de intervenção, indicando a necessidade de intervenções baseadas em metodologias inovadoras de educação em saúde, bem como modelos de pesquisa que correspondam aos objetos de estudo.
This article describes the experience of in-service training for pedagogical coordinators of the Brazilian School Nutrition Program (PNAE) developed by the Cooperation Center for Student Food and Nutrition of the Federal University of Bahia (CECANE-UFBA). Participant observation and analysis of data documented in films, group discussion summaries, procedural and final evaluations and field diaries are used. The formative experiences were in 2011, in two municipalities in Bahia and Sergipe states, involving 118 pedagogical coordinators from 79 municipalities in both states. It was revealed that the objective of raising awareness and guiding pedagogical coordinators for mainstreaming the theme of food and nutrition has been achieved. The educational proposal was evaluated by the coordinators as "dynamic," "productive" and "interactive," promoting the exchange of experiences among participants. Despite considering the theme relevant, the pedagogical coordinators do not have sufficient training about food and nutrition to back their teaching practices. It is considered that their training has some limitations on the impact in the fieldwork, as the knowledge acquired night be dissipated when the coordinators return to their workplace due to the lack of ongoing training.
The current scenario generated by the Covid-19 pandemic enhances the condition of food and nutrition insecurity due to the worsening of poverty, hunger and lack of access to food, as well as the excess consumption of foods considered unhealthy. The effects of the pandemic enhances the need for a new way of arranging the production, distribution and consumption of food, giving new meaning to the relationship between food, eating and the environment. Thus, it is suggested that a reflection be made on the strategies for the appropriate healthy, adequate and sustainable diet in Brazil to face this health emergency. Actions must be focused on the articulation of strategies that foster sovereignty, food and nutrition security and healthier and more sustainable food systems such as the strengthening of family farming; income assurance for the population; access to quality food; changes in the food environment; dissemination of information on healthy and sustainable food in official recommendations for the pandemic and food guides covering the entire food system, as well as food and nutrition education practices.
