On the port pole is very much found biota attached. The biota is barnacles (Balanus sp). The attachment does not only occur in natural substrates. It may also occur in different means of human interest, such as ships and docks. This research is devoted to macroscopic biofouling, whose attachment is massif on the dock pole. This study aims to determine the species and ecological index of biota fouling in different media in the Daruba Morotai Island Regency. The data retrieval method uses a quadratic with a scale of 20×100 cm2. This study used three media, namely wood media (speedboat wooden pier), iron media (speedboat floating pier), and concrete media (Imam Lastori's main pier). Ecological indices analyzed include abundance, Diversity Index, Uniformity Index, and Dominance Index. The analysis results found the most number of macrobiofouling species in the wood medium (7 species). The largest number of individuals found is Branchidontes sp. (661 individuals). The findings of the study of the maximum macrofouling abundance are found in concrete media with a value of 491. Diversity in all media is classified as medium with a value of H' on wood media 1.22, iron media 1.04, and concrete media 1.34. The uniformity index (E) of all three media indicates the uniformity of broad populations with the maximum E found in concrete media 0.84. The study of dominance in wood media by 0.41, iron media 0.48, and concrete media 0.32 showed that dominance is poor.
Tujuan penelitian ini adalah menganalisis umur simpan ikan asap yang dilapisi kitosan sisik ikan. Penelitian ini menggunakan 8 perlakuan yaitu tanpa pelapisan, pelapisan dengan minyak kelapa, asam asetat 0,5%, dan kitosan (2, 4, 6, 8, dan 10%). Ikan asap yang dilapisi kitosan disimpan pada suhu ruang dan diamati kenampakan, bau, rasa, tekstur, jamur, dan lendir menggunakan lembar penilaian sensori ikan asap (SNI 01-2346-2006). Hasil penelitian menunjukkan bahwa organoleptik ikan asap tanpa pelapisan kitosan pada penyimpanan hari ke 2 sudah tidak memenuhi mutu organoleptik (nilai <7), sedangkan dengan pelapisan kitosan 10% nilai organoleptik > 7 pada penyimpanan hari ke 2 dan 3. Organoleptik kenampakan, bau, jamur, dan lendir ikan asap yang dilapisi kitosan sisik ikan dengan konsentrasi 10% setelah 3 hari penyimpanan, nilainya masih 7. Namun, organoleptik rasa dan tekstur ikan asap dengan pelapisan kitosan 8 dan 10% masih memenuhi syarat (minimal nilai 7) pada penyimpanan hari ke 2.
A fish has the natural perishable character because of the high concentration of water. The fish production have to be utilized in fast and accurate before the spoilage caused by the bacterial activity. One of the ways on utilizing fish is to be prepared as diversification products which is meatballs, and ect. The production of Tuna meatballs in Regency of Morotai Island is still in the standard level that probable to be improved. The improvement of the meatballs was made with the use of natural dye. One of the natural dye that can be used as food extraction (BTP) is Caisim (Brassica juncea L.). The purpose of this research is to create the meatballs product with Caisim (a kind of Chinese vegetable) and evaluate the product’s characteristics used the organoleptic test. The production was made at the Laboratory of Fisheries and Marine in University of Pacific Morotai. There were 50 untrained panelists. The result of this research is the diversification of Tuna meatballs with natural dye Caisim (Brassica juncea L) is successfully made and named with ‘Pucuk Meatballs’ (Bakso Pucuk). The Characteristics product of ‘Pucuk Meatballs’ has a smooth surface, not bladdery, and bright; the product’s specific fragrance; also, compact and rubbery texture.
