In this study, the intention was to investigate the chemical and sensorial changes occurring during cold storage (4 ± 1°C) of caviar obtained from rainbow trout Oncorhynchus mykiss W. 1792 that was dry salted in different ratios. Caviar has a higher fat and protein content than other seafood products, and in processing it with dry salting technology, it was determined that the shelf life could be up to 28 days for the experimental group in which salt was applied at a rate of 4% and up to 35 days for the experimental group in which salt was applied at a rate of 8%. Thus the storage period of the samples is longer for the products to which a high (8%) amount of salt was applied than the products to which a low (4%) amount of salt was applied in the salting process.
In this study, the chemical, microbiological and sensory changes during storage at 2 ± 1 °C of fillets coated with edible films prepared with chitosan incorporation of thyme, clove, rosemary essential oils were examined. To create the experimental samples, a total of six groups of fillets coated with different edible films (normal, vacuum-packed, chitosan, chitosan with added thyme oil, chitosan with added clove oil, and chitosan with added rosemary) were used. The food composition of the fillets and experimental samples were determined after they had been coated with edible films. The results of analysis showed that, the preservation period of fresh fillets ended on day 12th, that of vacuum-packed fillets on day 15th, that of fillets coated with chitosan incorporation of rosemary on day 27th, that of fillets coated with chitosan incorporation of thyme and chitosan incorporation of cloves on day 30th. In comparison with the control group, fish spoilage was significantly delayed in samples coated with chitosan incorporation of thyme and chitosan incorporation of cloves (< 0.05). The lowest bacterial growth, values of PV, TBA and TVB-N were obtained in fish samples coated with thyme + chitosan and cloves + chitosan. In terms of the general acceptability of the fish, as determined by qualified panelists, it was determined that the highest score was given to the experimental group to which essential oil of clove had been applied.
In this study, roes obtained from carp (Cyprinus carpio carpio) that were caught from Keban Dam Lake (Elazığ) and the cultured rainbow trout (Oncorhynchus mykiss) were processed as caviar and compositions of proximate and vitamins, cholesterol levels were determined in the products.
In the research, roes obtained from mature fish were processed under aseptic conditions by suitable procedures for different fish species. The obtained caviars were weighed as 75 grams and filled in 200 ml capped glass jar and stored in +4 ºC for 28 days. As a result of the analysis in the study, the amount of dry matter was determined to be 35.94% in roes obtained from rainbow trout and 31.28% in roes obtained from carp. The average protein content in raw roe obtained from rainbow trout was determined to be 24.32%, it was determined to be 18.25 % in carp. In this study, the fat content in roes obtained from rainbow trout was determined to be 9.14%, but it did not show much change during processing and it was determined to be 8.84% in the end product.
During the production and storage of the caviar produced from rainbow trout and carp, the fat-soluble vitamin composition and cholesterol levels were determined. During the study, it was found that the amounts of vitamin A between rainbow trout and carp caviars were significantly different (p <0.001). Vitamins D and K were not detected in the caviar samples. As a result of analyzes, cholesterol levels were determined 73.76 mg/100 g in rainbow trout roe and 10.82 mg/100 g in carp roe and it was observed that these values were not changed significantly during the processing and storage periods (on 0th, 7th, 14th, 21st and 28th days ).
In this study, the chemical and sensory changes of rainbow trout fillets coated chitosan, blueberry extract added chitosan and gojiberry extract added chitosan during storage (8°C) have been investigated. Treatments were C1:Control, C2:Chitosan, C3:Chitosan +1% w/v blueberry extract, C4:Chitosan+1% w/v gojiberry extract. During storage, the samples were analyzed in every three days period as chemical (pH, TVB-N, PV and TBARs) and sensorial (Colour, odour, appearance, general acceptable). During the storage period, C3 and C4 groups showed lower pH, PV, TBA, and TVB-N values than C1 and C2 groups. The sensory results are in parallel with chemical results.
