The global poultry industry has been faced with emerging broiler breast meat quality issues including conditions known as white striping (WS, white striations parallel to muscle fibers) and woody breast (WB, hardness of raw fillet). Experiments were conducted to evaluate effects of WS and WB hardness on meat quality traits in broiler breast fillets. In Exp. 1, birds were processed at approximately 9 wk of age and deboned at 4 h postmortem (PM); in Exp. 2, birds were processed at approximately 6 and 9 wk of age and deboned at 2 h PM. Fillets were categorized as: normal for both white striping and woody breast (NORM); moderate for white striping and mild for woody breast (MILD); severe for white striping and mild for woody breast (WS); severe for woody breast and moderate for white striping (WB); or severe for both white striping and woody breast (BOTH). Sarcomere length, gravimetric fragmentation index, marination uptake, cook loss, and Meullenet-Owens razor shear energy (MORSE) values on non-marinated and marinated fillets were assessed. Sarcomeres tended to be longer (P = 0.07) with increasing severity of WS and WB in both experiments and gravimetric fragmentation index did not differ (P > 0.05) among categories. Marinade uptake decreased (P < 0.05) with increasing severity of WS and WB. Cook losses of non-marinated and marinated fillets were greatest (P < 0.05) in the BOTH category. Even though MORSE values did not differ (P > 0.05) in non-marinated fillets, the marinated BOTH fillets had greater MORSE values (P < 0.05) than other categories of fillets in Exp. 1. Non-marinated NORM fillets had greater (P < 0.05) MORSE values than the other categories at 6 wk age; however, MORSE values did not differ (P > 0.05) among categories of marinated breasts. At 9 wk, WS and BOTH were higher (P < 0.05) in MORSE compared to NORM for non-marinated fillets, but similar to NORM marinated fillets. Results suggest that severe degrees of white striping and woody breast, individually or in combination, negatively impact meat quality, especially water holding capacity attributes such as marinade uptake and cook loss.
Adult Leghorn roosters were precision-fed 44% protein soybean meal (SBM) or 80% ethanol-extracted soybean meal (ESBM) to determine nutritional differences due to the removal of oligosaccharides. Dry-matter digestibility and TMEn as well as apparent hemicellulose and cellulose digestion were determined. The transit time, rate of passage, and pH of the cecal contents were also established with roosters that had consumed a .3% chromic-oxide diet that contained SBM or ESBM. The protein content of the SBM and the ESBM was 46.1 and 64.4%, respectively. The true-dry matter digestibility of SBM was 54%. The TMEn of the SBM on a dry-matter basis was 2,794 kcal per kg; and the apparent hemicellulose and cellulose digestibility was 9% and 0%, respectively. The true dry-matter digestibility of the ESBM was 67%. On a dry-matter basis, the TMEn of the ESBM was 3,368 kcal per kg; and the apparent hemicellulose and cellulose digestibility was 62% and 35%, respectively. Oligosaccharide digestion occurred mainly anterior to the ileo-cecal junction. Hemicellulose and cellulose digestion occurred predominantly in the lower gastrointestinal tract. The transit time for the ESBM diet was 115 min, compared to 71 min for the SBM diet. Based on a 16-h collection of excreta, the rate of passage was approximately 50% slower for the ESBM diet than for the SBM diet. The pH of the cecal contents from roosters consuming the ESBM diet was 7.21 versus 6.51 for the SBM diet.
Developmental hormonal changes in Cobb 500 chick embryos and hatched chicks were determined by measuring plasma insulin, glucagon, insulin-like growth factor (IGF)-I, IGF-II, triiodothyronine, thyroxine, and glucose concentrations at different ages of embryogenesis and posthatch development. Plasma samples were obtained daily from 10 d of embryogenesis (10E) through 13 d posthatch and also at 17 and 21 d posthatch. A significant increase in plasma insulin was observed with increasing age from 10E to hatch. Plasma glucagon levels remained low until 17E, and then significantly increased approximately 3-fold at hatch, which corresponded with increasing plasma glucose levels during late embryo development. The plasma insulin to glucagon molar ratio of incubation from 14E to 17E ranged from 2 to 4, and was significantly higher than at any other time during incubation. These results indicate that insulin may be an important promoter of chick embryonic growth by the anabolic drive to promote protein deposition. Insulin and glucagon increased after hatch, which may be due to increased feed consumption and increased utilization of carbohydrates as the key energy source, compared with nutrients obtained through lipolysis and proteolysis in the embryos. Plasma triiodothyronine increased 4-fold from 18E to 20E, and thyroxine increased 3-fold from 16E to 19E. Insulin-like growth factor-I and IGF-II peaked at 14E. Insulin-like growth factor-I steadily increased above embryonic levels during the 3 wk of the posthatch period, whereas IGF-II levels steadily declined. These results suggest that IGF-II may be a more important functionary for chick embryonic development than IGF-I, and that IGF-I may be more important than IGF-II after hatch. The profile of metabolic hormones in the present study may help support an understanding of significant changes that occur in embryonic development and posthatch growth in chicks.
White striping (WS) and woody breast (WB) are 2 poultry meat quality defects that affect the acceptance of raw breast fillets as well as properties of cooked and further processed products. The present study was intended to evaluate the incidence of these conditions in broilers at different ages and to compare the properties of fillets with different degrees of WS and WB. For this study, 1,920 birds were processed, at 6 and 9 wk of age, in a standard commercial inline processing system. After chilling, carcasses were deboned and butterfly fillets were collected and weighed. Individual fillets were scored for normal, moderate, severe, and very severe degrees of WS and WB, and for petechial hemorrhagic lesions (PHEM, 0 - no lesion to 2 - severe lesion). Representative fillets with NORM-WS/WB, SEV-WS, SEV-WB, and SEV-WS/WB were selected and stored at 4°C. After 24 h, fillet length, width, cranial height, and caudal height, as well as pH, color, and drip loss were recorded. There was an increase in incidence of severe and very severe WS and WB conditions at 9 wk compared to 6 wk of age. The relationship between fillet weight and the myopathies plateaued at 9 wk of age with more fillets showing a higher score. Mean PHEM scores were higher (P < 0.05) in SEV-WS, SEV-WB, and SEV-WS/WB compared to NORM-WS/WB birds, both at 6 and 9 weeks. NORM-WS/WB birds had lower (P < 0.05) live and breast weight, breast yield, and cranial and caudal heights, as well as b* value (yellowness) compared to SEV-WS/WB. NORM-WS/WB had lower (P < 0.05) pH while NORM-WS/WB and SEV-WS samples showed lower (P < 0.05) drip loss when compared to SEV-WB and SEV-WS/WB. The results from this study showed that the severe degrees of WS and WB are associated with heavier and older birds, and thicker breast fillets. Occurrence of severe degrees of WS and/or WB can affect various raw meat quality factors, mainly color and water holding capacity.
Broiler breeder pullets were divided into two groups at 21 wk of age. One group was given free access to feed (ad libitum) and the other fed a limited amount of feed (restricted). At 22 wk, all birds were photostimulated and maintained throughout an egg-laying cycle ending at 36 wk. Samples of liver and abdominal fat pad were collected just before photostimulation (prelight), after photostimulation at first egg and at peak egg production (plateau). Hepatic expression of sterol regulatory element binding protein-1, ATP-citrate lyase, fatty acid synthase, malic enzyme, acetyl-CoA carboxylase and stearoyl-CoA (Delta9) desaturase 1 genes in ad libitum birds declined from their highest levels just before photostimulation as the birds came into and maintained egg production. In contrast, the restricted birds had significant (P < 0.05) increases in the expression of these genes after photostimulation at first egg with a subsequent decline as they reached peak egg production. Hepatic expression of fatty acid binding protein, VLDL apolipoprotein (apoVLDL-II) and apoB genes increased significantly (P < 0.05) in both ad libitum and restricted breeders after photostimulation, whereas apoA1 gene expression declined during this time. Abdominal fat pad weights were significantly (P < 0.05) higher in the ad libitum compared with restricted birds after photostimulation. Lipoprotein lipase in this tissue showed a pattern of expression similar to that observed for the hepatic lipogenic enzyme genes. In conclusion, feed restriction during the pullet-to-breeder transition period significantly (P < 0.05) altered hepatic lipogenic gene expression in broiler breeders.
