The aimed of this study was quantified total phenols content, total flavonoids, and antioxidant activity in extruded ready-to-eat products made from yellow corn added with apple pomace powder. A central composite rotatable experimental design was used. The variables tested were exit die temperature (140-180 °C), feed moisture (14-20 g/100 g) and apple pomace concentration (0-30 g/100 g). The effect of the process variables on the total contents of phenols, flavonols, flavanols and flavonoids and antioxidant activity was evaluated using the response surface methodology. The data of each response were fitted to a second-order model with determination coefficients ≥ 0.71. The extruded product with no added apple bagasse showed the lowest values of the evaluated phytochemicals but had higher antioxidant activity by DPPH. The addition of apple pomace increased the phytochemical content and antioxidant activity in extruded ready-to-eat products made with yellow corn. This makes it possible to obtain a formulation of an extruded food rich in phenolic compounds with potential to contribute to prevention of oxidative stress, while making use of agro-industrial waste from apple juice extraction.
Los componentes bioactivos de fuentes vegetales suelen ser inestables frente a factores como la radiación y los cambios de temperatura, lo cual implica que su conservación y manejo sea un reto. Un método para estabilizar este tipo de componentes es el secado por aspersión, que consiste en asperjar una solución líquida de forma distribuida en la cámara de secado que circula aire caliente, para eliminar el agua y obtener un polvo. El primer punto de control es durante la alimentación al equipo, ya que debe mantenerse en in intervalo de temperatura o de lo contrario podría generar una modificación no favorable en los componentes termolábiles. El objetivo del trabajo fue predecir a partir de cálculos numéricos de la transferencia de calor en el contenedor de alimentación del sistema de secado, la afectación del tiempo finito de evaluación, y los coeficientes convectivos y conductivos de transferencia de calor sobre el historial térmico, además de los requerimientos de suministro de energía para mantener la temperatura controlada.
Mucilage extracted from the parenchymatous and chlorenchymatous tissues of Opuntia robusta were obtained using water or ethanol as the extraction solvent. The changes in the different tissues by using different extraction solvents were evaluated via scanning electron microscopy (SEM) and Fourier transform infrared (FT-IR) and Raman spectroscopy; in addition, the effect of mucilage coating on the various quality characteristics of tomato (Lycopersicum sculentum) was evaluated. The SEM results showed that the mucilage extracted from the parenchyma had a higher aggregation level that the mucilage extracted from the chlorenchyma. The presence of three characteristic bands of pectic substances in the FT-IR spectra between 1050 and 1120 cm −1 indicated that the mucilage extracted from the parenchymatous tissue had a higher content of pectic compounds than the mucilage extracted from the chlorenchymatous tissue. It was also observed in the Raman spectra that the level of pectic substances in the mucilage extracted from the parenchymatous was higher than that in the mucilage extracted from the chlorenchymatous tissue. The mucilage extracted from the parenchymatous tissue was more effective as an edible coating than the mucilage extracted from the chlorenchymatous tissue. Tomatoes covered with mucilage showed significantly enhanced firmness and reduced weight loss. The uncoated tomatoes showed higher lycopene content than the coated tomatoes on the 21st day. This study showed that the Opuntia robusta tissue and extraction solvent influence mucilage characteristics and that Opuntia robusta mucilage is a promising edible coating.
