RESUMO No setor pesqueiro a busca pela qualidade do pescado está cada vez mais exigente. Os consumidores avaliam rigorosamente a qualidade dos produtos adquiridos, procuram peixes com maior frescor e melhor aparência possível. O método de abate é um importante fator atuante no frescor do pescado, portanto neste estudo foi realizado a determinação do índice de rigor mortis de juvenil de Beijupirá utilizando o método de abate por insensibilização com Eugenol (1,5 mL/litro) durante 10 minutos e posteriormente sacrifício por meio de uma secção transversal da medula espinhal imediatamente após a região occipital. Após o abate, iniciou-se o acompanhamento do rigor mortis dos juvenis de no intervalo de 20 minutos, durante 15 horas. A distância média que separou a base da nadadeira caudal ao ponto de referência foi de 4,77 cm, o processo de pleno rigor ocorreu somente 9 horas após o abate.

Consumers rigorously assess the quality of fishing products, considering mainly freshness and appearance. The slaughter method is an important factor in relation to the freshness of the fish, because it maintains important organoleptic characteristics that will influence the marketing of these products, therefore, in this study an evaluation of the Rigor Index (RI%) of cobia was performed. The following methods were used: in desensitizing with eugenol and hypothermia. Immediately after the slaughter, the monitoring of rigor mortis began. In the method of slaughter with eugenol reached full rigor after 6 hours, and in the method by hypothermia lasted 4 hours. The slaughter method with lower stress showed a significant difference, with a positive influence on the duration of the stages of rigor mortis.Over time, the choice of slaughter methods is based almost exclusively on ease of application and those with the lowest cost, and not on those that cause less suffering Leandro Presenza et al.
