Background: Children need adequate nutrition intakes to avoid stunting. One thing that we can do is by giving them an adequate protein intake. Snakehead fish is one of the foodstuffs that have a high protein composition. Objective: This study was carried out in an effort to improve the nutritional status of children to avoid stunting by using snakehead fish which is processed into shreds (commonly called shredded fish). Methods: This study used a post-test only design approach with a control group. The subjects of this study were 30 children with inclusion criteria: subjects were in good health, aged 36-72 months, could receive an oral diet, could consume shredded fish and fish, and had no history of protein allergy. Children were given lunch with a side dish of shredded snakehead fish continuously for 30 days. Results and discussion: Shredded fish that produced is using snakehead fish has a brownish yellow color and is dry, fibrous, crunchy and tasty.
Food management in food services must apply the principles of food sanitation hygiene, from selecting food ingredients to presenting food to controlling risk factors for food contamination. Aulia Catering Service is one of the catering businesses located in Palangka Raya and is still running today. This study aims to determine the effect of providing nutritional counseling using video media about sanitary hygiene in food processing on the level of knowledge and attitudes of food handlers at Aulia Catering Service in Palangka Raya City. The design of this study is Pre Experimental Design with One Group Pre Test Post Test Design with a total sample of 20 people. The results of this study show that most of them are 60% female, 65% elderly, 60% high school education, 60% length of work and 65% length of work. The level of knowledge before is 50% good and 50% less; after counseling increases to 100% good. The attitude before 55% is good and 45% less; after counseling, it increases to 100% good. So it can be concluded that nutrition counseling using video media influences the knowledge and attitudes of food handlers at Aulia Catering Service in Palangka Raya City, with the result of a knowledge p-value of 0.002 and an attitude p-value of 0.003.
Absract – M-Learning (Mobile Learning) can be defined as mobile learning media using mobile devices in universities. The Indonesian Ministry of Health in the field of Center for Health Human Resources Education provides a Learning Management System (LMS), a new learning system using technology for students in the health sector. Likewise, in the Department of Nutrition, Health Polytechnic of Ministry of Health, Palangkaraya, also implements the Virtual Learning Program (VILEP) for teachers and students. This study examined the significance of the effect of student admission from Health Polytechnic of Ministry of Health Palangkaraya by of mobile-based VILEP. This study used a research model to describe the relationship between several variables that affect the acceptance of mobile learning as a new innovation at the Palangkaraya Health Polytechnic. For this reason, this study adopted and modified the model of The Uniï¬ed Theory of Acceptance and Use of Technology (UTAUT) from Mahande and Malago (2016) and acceptance M-Learning as an extended UTAUT variable to determine the influenced factors of M-Learning VILEP acceptance of M-Learning VILEP as a new innovation at the Health Polytechnic of Ministry of Health Palangkaraya. Based on the evaluation results of VILEP M-Learning acceptance model, Effort Expectancy (EF), and Facilitating Condition (FC) have a significant effect on Behavioral Intention (BI), while Behavioral Intention (BI) and Facilitating Condition (FC) have a significant effect on acceptance. M-Learning (MA) VILEP. Students have easy access to VILEP system, supported by the infrastructure of the institution. The main intention and infrastructure encourage students to use VILEP as a learning tool. Keywords: M-Learning (Mobile Learning), Virtual Learning Program (VILEP), The Uniï¬ed Theory of Acceptance and Use of Technology (UTAUT) model.
– School age is a productive age in the process of child development. Adequate nutrition is needed by children in the process of growth and development. Fulfillment of good nutrition will also have an impact on good health in children. In meeting nutritional needs, the family has an important role in determining children's nutritional behavior. Objective: to analyze the role of the family in fulfilling child nutrition. Methods: using descriptive quantitative research methods, using a cross section study research design with data collection techniques carried out using a random survey of 30 elementary school children. The method of data analysis was used to determine the relationship between the type of mother's work and the level of education with the fulfillment of child nutrition using descriptive analysis using the Chi square test (x2). Research Results: Mother's type of work has no significant effect on children's breakfast habits with a value of ρ-value = 0.369, but has a significant effect on the habit of carrying lunch with a value of ρ-value = 0.029. Meanwhile, mother's level of education has a significant relationship with breakfast habits with ρ-value = 0.024 and bringing lunch to school with ρ-value = 0.000081.
