ABSTRAKTujuan Pengabdian di Sekolah Menengah Kejuruan (SMK N 4 Lewa) adalah melatih kemampuan siswa/siswi untuk menghasilkan asap cair dengan pemanfaatan limbah tongkol jagung dan melatih siswa/siswi untuk memiliki pengetahuan dan keterampilan tentang metode pengaplikasian asap cair dalam proses pengolahan daging dengan menghasilkan produk dendeng ayam dengan varian rasa asap yang khas, dengan pertimbangan nilai gisi yang baik dan sehat. Kegiatan ini merupan PkM dosen mandiri. Pelaksanaan PkM dilakukan di SMK N 4 Lewa, Kecamatan Lewa, Kabupaten Sumba Timur, Provinsi Nusa Tenggara Timur. Jarak dari kampus Universitas Kristen Wira Wacana Sumba ke lokasi mitra adalah 57 km. Waktu pelaksanaannya terhitung mulai 18 Agustus – 30 November 2021. Mitra yang terlibat dalam kegiatan ini adalah siswa/ siswi jurusan peternakan dan perwakilan guru-guru kejuruan. Jumlah peserta yang mengikuti kegiatan ini terdiri dari 50 orang. Kegiatan PkM ini terdiri dari tahap pra kegiatan, pelaksanaan kegiatan dalam bentuk pelatihan dan monitoring evaluasi kegiatan dengan cara menyebarkan kuisioner dan meminta tanggapan peserta terhadap kepuasan kegiatan dan produk yang dihasilkan. Hasil yang dicapai adalah siswa/ siswi dengan mudah melakukan praktek pengolahan asap cair dengan memanfaatkan limbah tongkol jagung dan memiliki kemampuan pengaplikasian asap cair dalam pengolahan daging dengan menghasilkan produk dendeng ayam dengan varian rasa asap yang khas. Kata kunci: tongkol jagung; asap cair; dendeng ayam ; wirausaha ABSTRACTThe purpose of Service at Vocational High School (SMK N 4 Lewa) is to train students' abilities to produce liquid smoke by utilizing corncob waste and to train students to have knowledge and skills about methods of applying liquid smoke in the meat processing process by producing beef jerky products. Chicken with a distinctive smoked flavor, with good and healthy nutritional value in mind. This activity is an independent lecturer PkM. The implementation of PkM was carried out at SMK N 4 Lewa, Lewa District, East Sumba Regency, East Nusa Tenggara Province. The distance from the Wira Wacana Christian University Sumba campus to the partner location is 57 km. The implementation time is from 18 August – 30 November 2021. The partners involved in this activity are students from the livestock department and representatives of vocational teachers. The number of participants who took part in this activity consisted of 50 people. This PkM activity consists of a pre-activity stage, implementation of activities in the form of training and monitoring of activity evaluations by distributing questionnaires and asking participants for responses to the satisfaction of activities and products produced. The results achieved are students easily practice liquid smoke processing by utilizing corncob waste and have the ability to apply liquid smoke in meat processing by producing chicken jerky products with a distinctive smoke flavor variant.
