It is primarily a task of prevention, given the large amount of existing products on the market, involves defining criteria for selecting products when this procedure is applied. This study reveals the conclusions from the results obtained by a food control institution during the period 2005-2012.This research reveals that 46.6% of 4,178 food samples analyzed in the period were unfit.The samples, when referred to types of trade situated on links in the food chain, are focused on those with more developed infrastructure to produce or commercialize, according to the link into consideration, a single batch of product in larger quantities.It is also proposed a methodology for organizing data on food samples in laboratories.The aims are to improve the quality of sampling and facilitate information analysis results of samples, which is in laboratories operating in different parts of the country, comparable on the basis of the Argentine Food Code.
