Anthocyanin is a compound that forms natural dyes in plants in giving colors orange, red, and purple. Anthocyanins can be found in red, purple, dark red plants such as berries and ornamental plants such as Butterfly pea (Clitoria ternatea). Butterfly pea (Clitoria ternatea) have a high enough potential for the food industry including being used as food coloring and used as traditional medicine. Process extraction anthocyanin of Butterfly pea (Clitoria ternatea) using different methods produces extracts with different total anthocyanins. In the future, further research is needed to be able to extract anthocyanin in telang flowers to produce an extract with high total anthocyanin and not easily damaged.
Hard candy is a confection manufactured by melting a flavoring combination of glucose, fructose, and fruit juice. This research should focus on establishing the sensory properties of picked hard candy, including the fat and protein content, based on sensory quality. A fully randomized design (CRD) was utilized in this trial, with two factors: factor A was the concentration of sweet corn extract (100 g, 95 g, 90 g), while factor B was the concentration of sucrose and honey (60 g:10 g, 55 g: 15 g, 50 g: 20 g). The data were analyzed using ANOVA and Duncan's Advanced Test with a 95% confidence interval. The results showed that adding various concentrations of sweet corn extract, sucrose, and honey significantly affected the panelists' assessment of the sensory quality of color (brown-yellow to golden yellow) and texture (hard to very hard) in hard candy. The sensory quality of aroma (no smell of sweet corn to smell of sweet corn) and taste (sweet to very sweet) did not significantly affect the hard candy produced. Hard candy with the addition of sweet corn extract, sucrose, and honey selected is hard candy with A1B2 treatment (corn extract 100 grams, sucrose 55 grams, and honey 15 grams). The chemical testing showed that the selected hard candy product contained 1.11% fat and 2.06% protein content.
Pepaya merupakan yang termasuk kedalam buah klimaterik yang akan cepat matang dalam waktu singkat, hal tesebut membuat banyak petani melakukan pemetikan pepaya dalam keadaan masih dalam keadaan setengah matang dengan tujuan agar dapat menjaga mutu papaya pada saat distribusi. Salah satu upaya untuk dapat membuat papaya matang sempurna Ketika sampai pada konsumen adalah dengan melakukan pemeraman menggunakan daum lamtoro. Tujuan dari penelitian ini adalah untuk mengetahui pengaruh berbagai lama pemeraman dengan menggunakan daum lamtoro terhadap karakteristik sensori serta fisikokimia pada papaya California. Metode penelitian yang dilakukan pada penelitian ini adalah Rancangan Acak Lengkap (RAL) yang terdiri dari lama pemeraman 4 taraf: 0 hari, 3 hari, 5 har dan 7 hari, serta penggunaan daum lamtoro 2 taraf: 0% dan 2.0 dengan pengulangan sebanyak 2 kali ulangan. Hasil penelitian menunjukan bahwa Lama pemeraman dan jumlah daun lamtoro berpengaruh nyata terhadap sifat sensori, sifat fisik dan kimia pada pepaya california. Pepaya california terpilih adalah pepaya perlakuan dengan lama pemeraman 5 hari dan menggunakan daun lamtoro sebanyak 20%. Penggunaan daun lamtoro mampu untuk mempercepat proses pematangan pada pisang pepaya california.pepaya california terpilih mempunyai rata-rata tingkat kekerasan yaitu 4,5 kg/cm2. Pepaya california terpilih mengandung rata-rata kadar air 89,78%, kadar total gula 12,53% dan kadar vitamin C 144,86 (mg/100 g).
