The studies that reveal the impact of the bee products on overall health are accompanied by new researches every year, and the importance of these researches are gradually on the rise. Bee products that are used as food and food supplements and drug concentrations in the historic process are drawing the attention with their marvellous characteristic features. The search for nourishment of the body on behalf of healthy living is currently being searched by many people. Therefore, the consumption of products that protect the health appears as the primary preference of people. In the light of this recent tendency, food sector is now offering well-supported products that are suitable for this preference. At this point, bee products such as honey, pollen, bee bread, royal jelly and propolis gain importance as functional food with their nutritious features that help in protecting the health. In this article, within the consideration of the researches that evaluate bee products as functional food, we aim to introduce the prominence of bee products in our nourishment and overall health.
Recently, an increasing interest is paid to bee products obtained as a result of the fermentation process. Some of them can be consumed directly (bee-collected pollen, honey, bee bread etc.), while others are the result of lactic and/or acid fermentation (honey vinegar and honey wine). Bee bread is the result of pollens’ lactic fermentation, whereas mead is obtained by honeys’ lactic fermentation. Moreover, as a result of honey acetic acid fermentation, honey vinegar is obtained. Sensory characteristics and aroma composition have been scarcely studied, which may depend on the starter culture and fermentation process. Along with the medicinal properties they are a vital resource for future researches as they are of particular importance in the food market. In this review, we discuss the aroma-active compounds, taste, and sensorial characteristics of fermented bee products along with the approaches that can be developed for the flavor improvement based on existing technologies. Furthermore, the beneficial effects on human health are also described, with special attention that should be attributed to finding the use of probiotics in these fermented products as health-promoting effects.
1. An experiment was conducted to determine the possibility of stimulating sexual development at an early age in male and female broiler chickens by administration of apilarnil, a natural bee product, in the pre-pubertal period. 2. From 28 to 55 d of age, birds were given apilarnil orally. The effects of low (2.5 g/bird) and high (7.5 g/bird) doses of apilarnil on growth performance, testicular weight, secondary sexual characteristics, blood lipids, testosterone and fearful behaviour were evaluated. 3. Apilarnil administration did not cause a positive effect on growth performance of male and female broilers suggesting that apilarnil did not have an anabolic effect. 4. Apilarnil administration suppressed blood glucose and cholesterol. 5. Birds receiving apilarnil remained immobile for a shorter period in a tonic imobiliy test and showed less home-cage avoidance responses suggesting a lower level of fearfulness. 6. Increases in testicular weight, testosterone concentration and comb growth in males receiving apilarnil implied that it stimulates the sexual maturation at an early age. However, a similar stimulation of secondary sexual characteristics was not observed in females.
Bal arılarının besin ihtiyaçlarının bilinmesi ve doğal floral kaynakların yetersiz kaldığı durumlarda ek beslemenin yapılması koloninin sürekliliğini sağlamada önemlidir. Çalışma tesadüf parselleri deneme desenine göre; karışık bahar poleni, piyasada satılan ticari arı keki, bal ve şeker şurubu ile beslenen her grupta 6 adet koloni yer alacak şekilde düzenlenmiş toplam 24 koloniden oluşturulmuştur. Araştırmada, arılı çerçeve sayısı, yavrulu alan, kışlama yeteneği, polen depolama alanı ve kışlama öncesi Nosema spp. durumu incelenmiştir. Denemede polen grubu arılı çerçeve sayısı, yavrulu alan ve polen depolama alanı bakımından önemli çıkarken (p<0,05) kışlama yeteneğinde gruplar arası istatistiksel farklılık tespit edilememiştir. Gruplar içerisinde en yoğun Nosema spp. yükü arı keki ile besleme yapılan grupta tespit edilmiştir. Bal arıları beslenmesinde polen vazgeçilmez bir kaynaktır. Doğada az olduğu dönemlerde taze polenin ek beslemede kullanılmasının koloni gelişiminde ve sağlığında etkili olduğu ortaya konulmuştur.
Throughout history, honey has been used for many different purposes and due to its medicinal properties, has been one of the products marketed by traders. The figure of the bee first appeared in drawings on rock with the history of humanity, then on statues, as a logo, on money or stamps, and also in movies. Beekeeping museums, which present the historical process of beekeeping, also reflect an important culture with their ancient hives, documents, beekeeping materials, and historical antiquities. The contribution of bees to the sustainability of natural life is very important and has a history of 100 million years. The importance of bees and their by-products is increasing day by day, and the demand for the beekeeping industry as alternative income determines the emergence of new products and activities. Based on its health properties, apitherapy is the basis of activities such as api-air and api-diet. In natural regions (i.e., mountainous areas, forests) where beekeeping is carried out, people’s tradition, food culture, and healthy lifestyle attract society’s attention. In this context, api-tourist activity appears as a new phenomenon. In this article, the existing literature was scanned to create a resource about these new fields triggered by the beekeeping sector.
