The issue of providing the residents of the Russian Federation with food for a healthy diet is still currently relevant. The population lacks essential biological substances. The inclusion of various types of agricultural raw materials in food products enables to improve the quality indicators of finished products. The article presents the outcomes of research on the development of a technology for the manufacture of a multicomponent chilled dessert for proper nutrition using a locally produced plant component, namely pumpkin and apples, as the main raw material. As additional components the following ones are used: yogurt, honey, ginger syrup, stevia, blackberry, pine nuts, orange. The authors have developed three product formulations and for each of its samples the quality and quantitative characteristics assessment, the nutritional and energy value, the concentration of minerals and vitamins have been established. Based on the test results, the relevance of the production of a multicomponent chilled dessert based on pumpkin and apple processing products has been justified. The product is recommended for all population groups as a product for proper nutrition. A portion of the developed multicomponent chilled dessert with a volume of 110 to 125 g (depending on the recipe) contributes to the satisfaction of more than 15% of a person’s daily need for potassium, and with the addition of orange – for vitamin C.
The article deals with the issue of efficient processing of local plant materials. The possibility of using the pulp of Michurinskaya pumpkin grown in Belgorod region for producing candied fruit is discussed. The product is characterized by high organoleptic characteristics. Results of the physical and chemical studies and microbiological analysis are consistent with the standardized indicators. The functional properties of the candied fruit were identified and described.
Fodder methionine is one of the most important amino acids in animal nutrition, and its deficiency in the ration negatively affects productivity. Currently, the following sources of methionine are represented on the Russian market of feed additives: DL-Methionine and Methionine Hydroxy. Liquid form — Methionine Hydroxy Analog Free Acid (MHA-FA) and dry (for example, МНA) — calcium salt (MHA-Ca2+). The most popular sources of dry methionine are DL-Methionine and hydroxy analog as calcium salt. Many sources state that the bioavailability of the hydroxy analog varies from 65 to 72% (one of the manufacturers of the commercial hydroxy analog claims that the availability of methionine is 84%). The experiment was carried out on broiler chickens. As a result of the studies carried out, it can be argued that the content of DL-methionine in the ration (in the amount of 65% of the hydroxyanalogue) in comparison with MHA-Ca increases the productivity of broilers: preservation – by 4%; live weight by 4.3%; average daily gains by 4.6%; feed conversion decreased by 7.1%; has a positive effect on meat productivity. Based on the data obtained during the experiment, it follows that the efficiency of MHA-Ca does not exceed 65%, compared to DL-Methionine.
Under industrial conditions, broiler chickens are constantly exposed to stressful factors that can increase their susceptibility to intestinal diseases, leading to reduced productivity, immune suppression, and increased mortality. Antibiotics are widely used to maintain and improve productivity in such conditions. However, in recent years, there has been a tightening of the rules on the use of antibiotics in animal husbandry in order to stop them from entering food for people, as well as in connection with the emergence of strains of pathogenic bacteria that have developed resistance to a wide range of antibiotics, which pose a danger to human health and life. In this regard, manufacturers are searching for alternatives to antibiotics. One of the most promising groups is probiotics. In the course of the study, it was found that low-protein diets (with a low protein content, but balanced by the amino acid profile) can unlock the potential of probiotic cultures of the Bacillus amyloliquefaciens strain and, as a result, increase the safety of broiler chickens by 4.6 %, body weight by 10.1 %.
An important problem of cattle breeding in Russia is the creation of a solid fodder base. Due to its absence, the genetic potential of dairy and beef cattle in our country is realized only by 30-50%. This work is devoted to the study of the influence of the belotine feed additive on the productivity of meat young animals. The studies have shown that in the case of the addition of 10% of the dry matter requirement, experimental groups surpass the control groups.
