Field muskmelon seeds contain plenty of oil. However, its potential as vegetable food oil has not been explored comprehensively. This study used three different processes, cold extrusion (CE), coasting followed by cold extrusion (R-CE), and supercritical fluid extraction (SFE), for the extraction of field muskmelon seed oil (FMSO) and studied its quality characteristics such as color, fatty acid composition, and volatile components. The study found that FMSO is abundant in unsaturated fatty acids (UFA) and has a pleasant aroma.
