AbstractPurpose -Individuals including tourists are known to be selective as to what they consider as appropriate food. The purpose of this paper is to analyze the traditional foods consumed by international tourists during their stay in Ghana, using the Analytical Hierarchical Process Model. Design/methodology/approach -The data used for the study were collected from a random sample of 675 out-bound international tourists in Ghana at the departure lounge of the Kotoka International Airport between February and March, 2010. Findings -In total, 17 traditional foods were popular among Ghana's international tourists, with red red being the most favoured food whilst impotupotu was the least preferred food. It was concluded that Ghana has the potential to have a thriving local food industry that could be based on the seven topmost foods. Research limitations/implications -As the first description of traditional food preferences among Ghana's international visitors, this study is intended to provide a strong point for more in-depth studies of the special qualities and attractiveness of the various traditional foods in Ghana. Practical implications -The observation that international tourists on holiday in Ghana patronize a great variety of Ghanaian foods suggests that there is a substantial market of food-interested visitors that needs to be nurtured. The current awareness and interest in Ghanaian foods need to be sustained by improving on the packaging, service quality, and sanitary conditions of most eating places, as well as the efficiency of regulatory institutions including the Food and Drugs Board, the Ghana Standards Board, and the Ghana Tourists Board Given that red red is more likely to sell or be consumed by Ghana's international visitors, food operators, including restaurants, food vendors, traditional catering points and hotels have to be sensitized to include this food item in their menus at all times. Social implications -This finding also signifies that the country can reduce loss of revenue overseas if the large food imports to feed international tourists are reduced. The centrality of examinations to the understanding of competences and abilities of examinees across the globe cannot be overemphasised. The paper focused on exploring the criteria used in setting the English language component of the Mature Students’ Entrance Examination questions in Ghana. The qualitative design (specifically, multiple case study design) was employed for the paper. Using the multi-stage sampling technique, five Ghanaian universities were used for the paper. The data was elicited from in-depth interviews applied on the lecturers who set the English language component of the MSEE questions. [1] data analysis spiral plan was employed to analyse the data. The paper revealed that there were major weaknesses in the criteria used by the universities in areas such as training of the assessors, use of standard assessment models and consideration of test takers’ characteristics. This paper was purposed on benchmarking the English language component of the Mature Students’ Entrance Examinations (MSEE) (administered in Ghana by universities to select undergraduate candidates) to the English language component of the West African Senior School Certificate Examination (WASSCE) which constitutes the mainstream Ghanaian university undergraduate entrance examination. The qualitative design (specifically, multiple case study design) was employed for this study. Using the multi-stage sampling technique, six Ghanaian universities (from whom eighteen English language component of the MSEE past questions were elicited) and three sets of the WASSCE English language component past questions administered in 2016, 2017 and 2018) were used for the study. O’Leary’s (2014) eight steps of conducting document analysis were used to analyse the data. The study revealed that there are major mismatches between the two sets of examinations in the areas of the test types, the basic language skills tested and the competences tested. The study advanced, to policy makers, suggestions such as testing Speaking and Listening for the improvement of the two sets of examinations. This study focused on the Mature Students’ Entrance Examinations (MSEE) which is a commonly used Ghanaian university placement examination. The fundamental aim was to evaluate the comprehensiveness of the English language component of the examination in the area of the four basic language skills (Reading, Writing, Speaking and Listening) tested. A second objective of the study was to explore the reasons behind the choices of the basic language skills tested in the MSEE. The multiple case study design was employed for this study, and the sources of data used were responses from in-depth interviews and the past questions. The data were subjected to analysis via thematic content analysis and document analysis respectively. The analysis highlights the specific contents of the past questions and their related basic language skills tested, as well as the reasons underlying the basic language skills tested. The results revealed that only two of the basic language skills (Reading and Writing) were tested, and time limitations and logistical challenges informed lecturers’ decisions not to test Speaking and Listening. The study recommends that Listening and Speaking tasks be incorporated into the examination to make it comprehensive.
