Matoa (Pometia pinnata J.R & J. G. Forster) is one of the plants that can be used for traditional medicine. Based on several studies, it is stated that the ethanolic extract of matoa leaves has good antioxidant activity. This study aims to determine the antioxidant activity of gel preparations from the ethanolic extract of matoa (Pometia pinnata) leaves. Matoa leaf extract (Pometia pinnata) was prepared using maceration method with 96% ethanol as solvent. Then the extract was formulated into a gel with 4 formulations, namely F0 (no matoa leaf extract), FI (with 0.1% matoa leaf ethanol extract), FII (with 0.3% matoa leaf extract), FIII (with ethanol leaf matoa by 0.5%). Furthermore, the antioxidant activity test was carried out on the gel samples using the DPPH method (1,1-diphenyl-2-picrylhydrazyl) spectrophotometrically at a wavelength of 515 nm. The results of the antioxidant activity test showed that the percentage of inhibition of the 96% ethanol extract of matoa leaf (Pometia pinnata) was F0 40.34%, FI 55.187%, FII 61.703%, FIII 27.969%, and the percentage inhibition of vitamin C was 178.947%. So it can be said that the matoa leaf extract gel has antioxidant activity.
Pemanfaatan obat-obatan yang bersifat alami telah menjadi pilihan bagi masyarakat Indonesia. Berbagai jenis tanaman di Indonesia telah digunakan secara turun menurun di masyarakat, tetapi belum dapat dimanfaatkan secara optimal. Pada pohon ciplukan mengandung senyawa aktif dan dapat mengatasi berbagai penyakit seperti kanker, rematik, jantung koroner dan katarak diperlukan senyawa yang memiliki aktivitas antioksidan. Penelitian ini bertujuan untuk mengetahui aktivitas antioksidan yang terdapat pada ekstrak metanol daun ciplukan. Salah satu metode pengukuran radikal bebas oleh senyawa antioksidan dengan menggunakan metode 2,2-diphenyl-1-picrylhydrazyl(DPPH). Metode 2,2-diphenyl-1-picrylhydrazyl(DPPH)merupakan suatu metode pengukuran antioksidan yang sederhana, cepat dan tidak membutuhkan banyak reagen. Tumbuhan yang mempunyai potensi sebagai penghambat radikal bebas ialah ciplukan. Setelah diuji dari hasil penelitian pada ekstrak metanol daun ciplukan didapatkan IC50sebesar 820,5695 ppmyang artinya sangat lemah namun masih berpotensi sebagai antioksidan.
Patin Fish (Pangasius, SP), is one type of freshwater fish found in rivers in Riau Province. Patin fish is a source of high quality food, but it is a highly perishable food. Therefore, to overcome this need a way of preservation and processing that can maintain durability and not reduce the nutritional value that is by making surimi. In this research, the basic ingredients of patin fish are made with sago flour. Sago flour has different physical properties from tapioka flour and wheat flour so that it will increase the ability to from in surimi. Surimi is made with washing variations and added sago four. The results of this research were obtained from testing the chemical characteristics of surimi which were made with washing variations and obtained sago flour. The lowest and highest water conten of surimi is 52.1832% and 75.7656%. The lowest and highest protein content of surimi is 8.6631 % and 17.5487%.

Penelitian ini dilakukan untuk meningkatkan kualitas dan ketahanan nasi dengan menambahkan sari buah nanas (Ananas comosus L. Merr). Sari buah nanas digunakan sebagai pengawet alami pada nasi yang dimasak dan disimpan di dalam magic com. Buah nanas mengandung senyawa asam sitrat yang mampu menghambat pertumbuhan bakteri, kapang, dan ragi. Asam sitrat mampu merusak membran bakteri dan memisahkannya dari sel. Buah nanas juga mengandung enzim bromelin yang dapat berfungsi untuk memecah protein membran sel bakteri. Nasi yang sudah ditambahkan sari buah nanas akan disimpan di dalam magic com hingga 72 jam. Sari buah nanas ditambahkan pada nasi dengan konsentrasi 1%. pH, kandungan karbohidrat dan protein diukur pada 0 dan 72 jam penyimpanan nasi. pH, kandungan karbohidrat, dan protein pada nasi meningkat setelah 72 waktu penyimpanan.
