Sweet potato has great potency to be developed as an alternative carbohydrate source in the form of modified sweet potato flour. Autoclaving retrogradation is a physical modification method to improve the physicochemical characteristics of flour. The purpose of this study was to determine the effect of the autoclaving retrogradation method on the characteristics of various sweet potato flour: dietary fiber, resistant starch, starch digestibility, nutritional content, and antioxidant, and to determine the best modified sweet potato flour. The experimental design used a non-factorial completely randomized block design with four replications. The treatment consisted of 6 types of sweet potato, namely control (purple sweet potato without treatment), orange sweet potato, purple sweet potato, honey-sweet potato, red sweet potato, and purple white sweet potato). The results showed that there were significant differences in dietary fiber, levels of resistant starch, digestibility of starch, nutritional content, and antioxidant activity amongst various types of modified sweet potato flour. The best modified sweet potato flour was found in modified red sweet potato flour which contained 44.64% dietary fiber, 19.75% resistant starch, 13.50% starch digestibility, 66.32% antioxidant activity, with comparable nutritional content.
<p><strong><em>Background:</em></strong><em> Lampung Province is one of the provinces that has considerable marine fishery resource potential. <strong>Purpose:</strong> Mackerel bone flour has the potential to be developed because the mackerel fish bone meal contains high calcium. <strong>Method</strong></em><strong><em>s</em></strong><strong><em>:</em></strong><em> This research is a laboratory experimental study. The treatment is done by adding fish bone meal into biscuits and opaque products. Addition of fish bone meal to each product consists of 6 levels with different concentrations and 3 repetitions. </em><em>Data analysis using univariate analysis and bivariate analysis using analysis of variance (Anova) test.</em><em> </em><strong><em>Results:</em></strong><em> The results showed that the concentration of addition of mackerel fish bone meal most favored by Panelists on biscuit products in formula 3, namely biscuits with the addition of mackerel bone flour concentration of 5% and cassava opaque products in formula 3, namely cassava opaque with additional concentrations mackerel fish bone meal by 20%. Calcium content in formula 3 (5%) biscuits is 0.72%, cassava formula 3 (20%) is 0.131%. <strong>Conclusion:</strong> Panelists most like biscuit products with the addition of 5% mackerel fish bone flour and 0.72% calcium content, while cassava Opak is preferred with the addition of 20% mackerel fish bone meal containing 0.131% calcium.</em><em></em></p>
<p>Sweet potato is one type of tubers found in Indonesia. <em>Hybrid</em> of sweet potato flour is obtained from the modification of the processing by fermentation using lactic acid bacteria. The purpose of this study was to determine the nutritional and antioxidant content of various types of <em>hybrid</em> sweet potato flour. This research is an experimental laboratory with a true-experiment design. The experiment was arranged in a complete randomized block design (RCB) with three replications. The treatments are 6 types of sweet potatoes which include purple sweet potato Var.Antin 1, purple sweet potato val.local, white sweet potato, orange sweet potato, Japanese purple sweet potato Var.Ayamurasaki and cilembu sweet potato. The study included the fermentation process using lactic acid bacteria (Acetobacter xylinum) addition concentration of 5%, siege, analysis of nutrient content (water, ash, protein, fat, fiber and carbohydrates) and antioxidant activity of various types of <em>hybrid</em> sweet potato flour. The results showed that various types of <em>hybrid</em> sweet potato flour significantly affect the nutritional content which includes water content, ash content, fat content, protein content, fiber content and total carbohydrate. The result of antioxidant activity in various types of <em>hybrid</em> sweet potato flour after fermentation treatment in a concentration of 5% Acetobacter xylinum ranged from 29,383-53.7929%. The lowest value obtained at cilembu <em>hybrid</em> sweet potato flour and the highest value was obtained from the Japanese <em>hybrid</em> sweet potato flour var.Ayamurasaki.</p>
<p>Stunting merupakan indikator malnutrisi kronik yang menggambarkan riwayat kurang gizi dalam jangka waktu lama dan berkaitan dengan adanya proses perubahan patologis. Data menunjukan bahwa prevalensi stunting di wilayah pedesaan lebih tinggi dibandingkan di perkotaan. Penelitian ini bertujuan untuk mengetahui determinan balita Stunting usia 2 – 5 tahun di pedesaan dan perkotaan. Penelitian ini termasuk penelitian analitik dengan desain penelitian <em>cross sectional</em>. Subjek yang dijadikan kasus adalah balita stunting usia 2-5 tahun yang terdiri dari 32balita stunting di pedesaan dan 32balita stunting di perkotaan. Variabel yang diamati meliputi berat lahir, panjang lahir, tinggi badan ibu, pemberian ASI ekslusif, MP-ASI dini, dan sosial ekonomi. Analisis data dilakukan dengan uji t, mann whitney, uji <em>chi squere</em> dan atau fisher. Hasil penelitian ada perbedaan berat lahir, tinggi badan ibu dan sosial ekonomi di desa dan di perkotaan. Hasil tersebut merekomendasikan agar kegiatan ANC perlu dilakukan secara rutin oleh ibu hamil terkait dengan berat badan lahir serta peran serta Pemerintah daerah untuk meningkatkan status sosial ekonomi warganya.</p>
Bahan makanan yang banyak dijumpai di sekitar wilayah kerja Puskesmas Hajimena dan belum banyak dimanfaatkan untuk pembuatan MPASI adalah singkong. Masalah kekurangan konsumsi pangan akan berdampak nyata pada timbulnya masalah gizi terutama masalah gizi kurang pada balita. Berdasarkan data cakupan status balita gizi kurang desa pemnggilan adalah sebanyak 34 balita, angka ini termasuk tinggi dibandingkan dengan dua desa lainnya yaitu desa hajimena dan sidosari Salah satu faktor yang berpengaruh terhadap masalah gizi kurang pada balita adalah masih rendahnya pengetahuan kader yaitu sebesar 20 % dilihat dari hasil pretest sebelum dilakukannya pelatihan. Pengetahuan kader dalam pemeliharaan gizi balita masih rendah sehingga konsumsi zat gizi anak akan berkurang. Selama ini, praktek pemberian makanan pendamping ASI (MPASI) pada balita, seringkali tidak diperhatikan terutama dalam hal kepadatan zat gizinya. Hal ini terjadi karena masih rendahnya pengetahuan dan ketrampilan ibu balita dalam hal cara membuat dan menyajikan MPASI yang padat gizi, Rangkaian kegiatan meliputi penyuluhan dengan tema pemenuhan gizi seimbang berbasis konsumsi pangan (Food based approach) mengenai MPASI bergizi seimbang, pemanfaatan pangan lokal dalam penggunaannya untuk MPASI serta teknologi pangan dalam pembuatan MPASI serta pelatihan kader di desa Pemanggilan dengan melibatkan tenaga kesehatan dari Puskesmas Hajimena mengenai praktik pembuatan dan penyajian MPASI yang berkualitas dan padat gizi dengan cara memodifikasi pangan lokal sehingga memiliki kandungan gizi yang berkualitas. Jumlah kader yang dilatih sebanyak 20 orang kader dari 5 posyandu yang ada di desa Pemanggilan. Penilaian pelatihan dilihat dari hasil pretest dan post test dan terjadi peningkatkan pengetahuan sebesar 44,26%, Serta terjadi peningkatan keterampilan sebesar 90% dalam pengolahan MP-ASI Lokal. Peningkatan ketrampilan kader dapat dinilai pada saat praktik membuat menu MPASI lokal, Sehingga menghasilkan produk MP-ASI Lokal padat gizi dengan menggunakan bahan dasar singkong yaitu paha dakong, kue kacamata dan nugget singkong ati ayam dengan rasa, aroma dan tekstur yang disukai.
