Processing coffee from kepok banana peel is an option in diversifying food preparations and providing non-caffeine coffee. This study aims to study the characteristics of banana peel coffee based on fruit maturity and oven duration. In addition, it also analyzes total phenol and its antioxidant activity. The study design used a factorial randomized design with the first factor of fruit maturity (unripe and ripe) and the second factor of oven length (5, 10, and 15 minutes). Banana skin coffee has a yield ranging from 8.6 to 11.6%. Bulk density ranges from 0.43-0.48g/ml. Water content ranges from 3.9-6.39%. Ash content ranges from 0.92-6.79%. The content of phenol ranges from 0.6 to 2.46 mg PE/g. The coffee phenol content of ripe banana peel is larger than unripe. The longer oven increases the phenol content. IC50 and EC50 decrease with increasing phenol. The antioxidant activity of ripe banana peel coffee is larger than unripe
Macaron adalah kue sederhana yang biasanya terbuat dari putih telur, gula, dan tepung almond, dimana dua buah macaron ditengahnya diberikan isian. Penelitian ini bertujuan untuk mengetahui pengaruh penambahan pewarna dari buah naga, labu kuning, dan daun suji sebagai pewarna alami terhadap mutu fisik macaron oat. Metode analisis data yang digunakan yaitu metode RAL (Rancang Acak Lengkap), dengan 3 perlakuan pewarna alami yaitu pewarna dari buah naga, labu kuning dan daun suji. Berdasarkan hasil penelitian, kadar air tertinggi yaitu penggunaan pewarna alami dari buah naga sebesar 15,68% sedangkan kadar air terendah yaitu kontrol sebesar 6,18%. Hasil sensoris yang paling disukai panelis pada uji hedonik yaitu parameter warna sampel daun suji. Uji deskriptif terbaik yaitu parameter rasa manis sampel kontrol.
A field survey has been conducted to study the potency of fruit of palm grown in West Sumatra for animal feedstuff. Three coastal areas which were identified as most populated palm plant in West Sumatra were selected as study sites, i.e., Padang city and the districts of Padang Pariaman and Pesisir Selatan. Five clusters of palm were randomly selected in each selected site and then bunches of their fruit were identified. The bunches were divided into 4 groups based on maturity status: very young, young, mature and old fruit bunches. The old fruits were then harvested, weighed and processed to separate their endosperm part. After weighing, the endosperm were then dried and ground for chemical analysis. Parameters measured included: number of bunch, old fruit and their endosperm weigh, nutrient content of endosperm. The data were statistically analysis for variance analysis in completely block design with 3 treatments and 3 blocks as replicates. Results shown that the highest number of bunches was found by the old fruit (6.7 bunches/cluster), followed by the very young fruits (2.7), mature fruit (1.7) and young fruit (1.5). About 22 % of old fruit consisted of endosperm part. The endosperm contains about 16 % crude protein, very low crude fat of 0.6 %, but considerably high crude fiber of about 50.5 %.
Banana peel had the potential to be used as analog coffee. The sensory of analog coffee will determine consumer acceptance and potential for production. This research aims to study the effect of banana peel maturity and the length of the oven on the sensory characteristics of banana peel analog coffee. Ripe and unripe Kepok banana peels were dried and then baked in the oven with time variations of 5, 10, and 15 minutes/ 50 gram. Then it was reduced in size and sieved with 60 mesh. The sensory test was used hedonic were performed by untrained panelists and descriptive methods were performed by the first training panelists. The results were showed that the panelists' preference towards color and aroma of analog coffee powder increased with the length of baking time. The preference for ripe banana peel analog coffee was greater than that of unripe banana peel. The panelists' preference for the color, aroma, and taste of brewed analog coffee was increased with longer baking time. The flavor of brewed analog coffee of ripe banana peel was stronger than that of the unripe peel. The most preferred banana peel coffee was ripe banana peel baked at 180°C for 15 minutes. It was showed characteristics of darker color and a stronger aroma of coffee powder. The most preferred brewing analog coffee was that with the darkest color, the coffee's strongest aroma, and the strongest bitter taste.
