A carne de rã-touro possui baixo teor de colesterol, baixa quantidade de gorduras saturadas e alto teor de cálcio e proteínas. Características essa que fazem com que a carne de rã-touro, seja recomendada para o tratamento de algumas doenças. O presente trabalho visa determinar parâmetros bromatológicos e microbiológicos de linguiça a base de carne de rã-touro. De forma a cumprir esse objetivo, foram realizadas duas formulações, para formulação 1 (F1), com 36,23% de carne de rã-touro, 15,85% de carne suína, 45,29% de toucinho, e formulação 2 (F2), com 64,00% de carne de rã-touro, 16,19% de carne suína e 16,19% de toucinho. Os teores de umidade, proteína e cinzas, nas formulações não apresentaram diferença significativa entre si, somente teor de lipídios, que apresentou diferença entre as duas formulações, devido a presença de uma concentração maior de toucinho na formulação 1, quanto as análises microbiológicas, as duas formulações apresentaram ausência de contaminação, indicando boas condições de higiene e manipulação da matéria prima ou do produto final. Conclui-se que as linguiças de carne de rã, elaboradas e analisadas no presente estudo, se enquadram nos padrões da legislação vigente, apresentando características tecnológicas adequadas, demonstrando sua viabilidade comercial.
Studies about watersheds are relevant because of the necessary information for various environmental analyzes. Aided by geotechnologies, the objective of this work was to estimate and morphometrically characterize the Murubia Stream sub-basin (MSSB), in the municipality of Muqui (ES), in order to diagnose potentialities for some environmental problems and to support improvements in the environmental quality of the region. On the website of the Jones dos Santos Institute (IJSN), contour features and municipalities were acquired. With the aid of the ArcMap 10.2 program and the archives, a Digital Elevation Model of the region of interest was generated to later delimit the sub-basin. The geometric, relief and drainage characteristics of the MSSB were estimated based on the literature considered. It was found that the sub-basin has a low tendency to flood peaks due to its irregular shape. The relief has been classified as mountainous in almost the entire sub-basin and, together with its high altitudes, induces high vulnerability to erosion. The MSSB has a high drainage density, but a low river density, and requires an area of 442,48 m² to maintain each meter of water channel perennial and require relatively long distances for each drop of precipitation to reach the channel nearest water. The implementation of measures to minimize the incidence of erosive processes and the correct planning of local anthropic activities are some of the measures to ensure a good environmental quality of BHCM.
