In recent years the food industry has been increasingly focused on the use of by-products in the production of hemp oil as a source of biologically active components. There is a tendency in reducing the consumption of meat and dairy products and increasing consumer demand for vegetarian products. Therefore the world producers of hemp seeds position it as a unique source of protein. During the development of technology for the integrated processing of industrial hemp seeds, the process of obtaining bulk hemp products has been investigated. After obtaining oil from hemp seeds, the oilcake is formed which has biologically active properties: high content of valuable vegetable easily digestible protein, unsaturated fatty acids (Omega-3, Omega-6 and Omega-9) and valuable dietary fibers. By grinding and sifting hemp oilcake the bulk hemp products are obtained: "protein", flour and bran. In order to analyze the technology of obtaining these products their organoleptic, physical and chemical quality indicators, as well as amino acid and mineral composition were investigated. The industrial hemp seeds from the Ukrainian selection of the Glessiya variety were used for processing (the content of tetrahydrocannabinol is zero. Determination of quality indices of the received products was carried out in accordance with the current normative documents. Comparative analysis of the content of crude protein, fat, ash, fiber in hemp flour and "protein" proves that these products do not differ much in composition, but only in particle size.
The products of wheat processing remain for many peoples as one of the main sources of nutrients, essential minerals and heavy metals. Groats are the second largest product of wheat (after flour), and therefore it is expedient to determine the content of certain minerals in it. The purpose of the work was to determine the content of certain minerals in wheat groats and the level of heavy metals in it. To do this, samples of wheat groats of various types and brands were selected in the trading network: "Artek. Svoya liniya", "Poltavska № 3. Zernari" and "Artek. Rozumnyj vybir", in which determined the content of crude ash after dry mineralization, as well as calcium, phosphorus, magnesium, iron, manganese, cobalt, zinc, copper, lead and cadmium by atomic absorption and colorimetric methods. The determination of each indicator was performed in three parallel replications, and the difference between the obtained mean values was determined in accordance with the Duncan multiple test using the IBM SPSS Statistics 24.0 program. It was found that wheat groats "Artek" of different brands had no differences in the content of ash (1.27-1.32%), whereas in the groats "Poltavska № 3" was significantly lower the level of crude ash and phosphorus. It was determined that wheat groats of different brands and types did not differ according to the concentration of calcium (0.38-0.39 g/kg), magnesium (0.63-0.66 g/kg), iron (32.5-33.4 mg/kg) and manganese (17.4-20.5 mg/kg). The lowest content among investigated essential elements in wheat groats was found for cobalt, which varied in the range of 0.07-0.10 mg/kg. In the groats "Artek" concentration of copper and zinc did not differ significantly and was 3.96-4.48 mg/kg and 31.1-33.0 mg/kg, respectively. The lowest content of copper was in the groats "Poltavska № 3"-2.58 mg/kg, as well as zinc-16.2 mg/kg. In determining the level of heavy metals (lead-lower 0.19 mg/kg and cadmium lower 0.07 mg/kg) in the groats it is clarified that it does not exceed the level established by the national normative documents.
Water treatment by contact non-equilibrium low-temperature plasma refers to innovative methods of processing food raw materials, which requires determining the level of safety of its use to meet the requirements of food safety for humans. The test animals were divided into four test groups with two different basic diets. The tested substances were drinking main water (control group) and plasma-chemically activated water (experimental group); wheat bread (control group) and wheat bread produced using plasma-chemically activated water (experimental group). It was found that there was no significant difference between the control and experimental groups of animals in body weight and its changes during 90 days of the introduction of the test substances into the diet. The amount of water and feed consumed was in direct proportion to the change in the weight of animals in the corresponding diets. The hematological and biochemical analysis of the blood of the test rats did not confirm the toxic or allergenic effect of the studied feeding factors on their organism. An increase in the number of erythrocytes in the blood and activation of the phagocytic activity of experimental groups of animals were confirmed. This confirms the positive effect of plasma-chemically activated water and wheat bread made with its use on metabolic processes in the body of animals. Macromorphological parameters of the body of animals and the results of histological studies of the stomach, liver, kidneys and femur as potential target organs demonstrated the absence of dystrophic-degenerative changes in these organs. A comprehensive study of the food safety of plasma-chemically activated water and wheat bread made with its use proves the possibility of using an innovative method of water treatment in food production.
