Mushrooms are most relished food commodities owing to unique flavour and texture. Mushrooms are naturally gluten free, rich in bioactives, vitamins and health stimulating agents. Wild edible mushrooms were collected and consumed for thousands of years. In the state of Odisha, 20 wild mushrooms (6 orders and 9 families) are reported and consumed. Considering the unprotected nature, short shelf life and low period of availability, postharvest preservation techniques are essential for these Wild mushrooms. This paper assimilates the dehydration processes, recent advances in techniques, characteristics of wild mushrooms and most suitable technology for preservation and value addition to these wild mushrooms. It complies pretreatment methods and commercial dryers best suited for wild mushroom species reported from State of Odisha. Through this paper, a mathematical description for an investment comparison to carry out the desired value addition to the forest resource is carried out and potential benefit to tribal villages is estimated.
