The purpose of the research is to evaluate a new variety of winter soft wheat Galatea according to the economically valuable traits and properties. The Galatea variety is characterized by high winter hardiness (97 %), lodging resistance (4.5 points) and yield (7.3-9.8 t/ha). The main criterion of the advantage is the improvement of the quality characteristics of the grain ‒ the variation of the gluten content is 32-36 % (compared to the standard - 28-36 %), the protein content in the grain is 12-13 %, the overall assessment of flour quality is 0.7 points higher than the standard variety Angelina. Baking qualities are good, it belongs to valuable wheat varieties. When studied in the competitive variety testing (2015-2021), the minimum yield level was on average 9.9-55.5 % higher for the Galatea variety and the maximum yield level exceeded the indicators of the compared winter wheat varieties by 20.0-23.6 %. The genetic flexibility of the varieties under study has shown that the new Galatea variety with the coefficient of 6.78 is the most productive. The calculation of economic efficiency based on the market value of the product, production costs and yield has shown that when growing the new Galatea variety, the largest conditional net income of 58780 rubles/ha had been obtained, the level of profitability was 18.0 % higher compared to the Angeline standard variety and 34.0 % higher than the most popular variety in the region, Moskovskaya 39. As part of the import substitution program aimed at improving food security, the introduction of a new Galatea variety into production should significantly increase and stabilize the gross grain harvest in the Central Region of Russia. The new variety has been included in the State Register of Breeding Achievements of the Russian Federation since 2021. Recommended for use in the Central (3) Region.

Spelt wheat is an ancient species that has almost disappeared from the culture. The higher grain productivity of turgid wheat compared to other species and the similarity in grain characteristics to durum wheat attracts the attention of breeders.Interest in spelt, spelt and turgid wheat is growing as environmentally friendly crops that are superior to wheat in protein, fiber, B vitamins and minerals. Currently, interest in filmy wheat — spelt and spelt — has increased in Western Europe and the United States. There is information that using them in food reduces the risk of cardiovascular diseases and some cancers, which is explained by the higher fiber content in it than in the flour of other types of wheat. The technological characteristics of grain of spelled varieties Runo, Gremme, Gremme 2U, spelled variety Alkoran and promising variety sample Znamenie, durum wheat variety sample Pobeda 70 and turgid wheat variety Kanysh were determined. The conducted research confirmed the possibility of using spelled flour, produced from spelled grain of the Gremme variety, for the production of bakery products of increased biological and nutritional value and with a high organoleptic assessment. The possibility of using grain of new varieties of ancient wheat species in the production of whole and crushed cereals obtained by abrasive grinding has been determined.
The aim of the research was to create new high-yielding materials of soft winter wheat (Triticum aestivum L.) by interspecifc hybridization with winter spelt wheat (Triticum spelta L.). In the course of the research, crossbreeding of soft winter wheat varieties Columbia and Myronivska 65 was carried out among the crosses and subsequent hybridization of the obtained ofspring with the Zorya Ukrainy spelt winter wheat variety. Breeding sample 6274 was selected using multiple individual selections on morphological, biological and economically valuable indicators selected. The sample showed high productivity (7.21 t/ha), content gluten in grain (41.0 %) and complex resistance to adverse environmental factors, fungal diseases and pests for the period of competitive variety testing (2016–2018) in the Uman National University of Horticulture was characterized. Sample 6274 was transferred to the Ukrainian Institute of Plant Variety Examination in 2018 under the name Uman Princess, where during 2018–2020 its formal and qualifcation examination was conducted in 17 branches of different regions of Ukraine. During this period, the variety had a grain yield at the level of average indicators in the Polissya area (5.87 t/ ha) and was characterized by early ripening (growing season within 259–273 days), high resistance (8–9 points) to shedding, brown rust and Swedish fly. The baking properties of the variety are good: the strength of the flour is 182–253 units of alveograph, the volume of bread from 100 g of flour is 840–970 mm. The Uman Princess variety belongs to the middle-early group of plants. Distinguished by aligned stems and uniform maturation. According to the results of the qualifcation examination, the Umanska tsarivna variety was listed in the State Register of Plant Varieties Suitable for Distribution in Ukraine since 2020 and recommended for cultivation in the Polissya area.
