Comprehensive metabolomics analysis of key taste components in different varieties of table grapes

Abstract: Grapes are one of the world's largest fruit crops, which are rich in nutrients and taste. Summer Black, Gui Fei, Kyoho Grape, Giant Rose, Shine Muscat, and Rosario Bianco are the six most popular table grapes in Wuxi city, Jiangsu province. Owing to the lack of comprehensive investigations of metabolites in table grapes, the metabolic causes of differences in their taste are unknown. In this study, metabolites of six table grapes were profiled using ultrahigh-performance liquid chromatography-Q-Exactive Orbitr… Show more

“…The sample was prepared following the procedure described in a previous study [14] with minor modifications. Briefly, 200 mg sample was accurately weighed into a 2-mL centrifuge tube, 600 μL MeOH (stored at −20 • C) containing 2-amino-3-(2-chloro-phenyl)-propionic acid (4 ppm) was added, and vortexed for 30 s. Next, 100 mg of glass beads were added and placed in a tissue grinder for 90 s at 60 Hz.…”

“…Untargeted metabolomics has achieved extensive substance coverage, yielding comprehensive metabolite information, and detecting many previously unknown components. Currently, metabolomics has found applications in various fields, including biomarkers [12][13][14], disease diagnosis [15][16][17], drug safety [18], toxicology research [19], and plant studies [20][21]. Furthermore, Metabolomics also offers the potentiality of detecting, identifying, and quantifying variations in endogenous metabolites reflecting the balance of specific metabolic pathways, and biological changes of the internal microenvironment [22,23].…”

“…Metabolomics is a powerful tool for obtaining comprehensive information regarding the biochemical constituents of a biological system [9,10], and has shown unique advantages in the study of pharmaceuticals [11][12][13] and food science [14,15] field. UHPLC-quadrupole/orbitrap HRMS (UHPLC-Q-Orbitrap HRMS) is one of the most widely employed analytical tools in metabolomics studies [16], because of the efficient separation capabilities of UHPLC and excellent structural elucidation by HRMS [17].…”
