Cultural conditions for the production of bacteriocin by a native isolate of Lactobacillus delbruecki ssp. bulgaricus CFR 2028 in milk medium

Abstract: The effect of growth parameters and the molecular basis for antibacterial activity by a natural isolate of Lactobacillus delbruecki ssp. bulgaricus CFR 2028 was studied. The inhibition was tested against a toxigenic strain of Bacillus cereus F 4810. When grown in milk medium, the activity was highest at an incubation temperature of 37 degrees C in 48 h. The antibacterial activity appeared to be produced between late logarithmic and early stationary phases. The active principle was proteinaceous in nature (bact… Show more

“…Samples were collected at regular intervals to measure the cell growth of the strain (A 600 ), pH change and bacteriocin activity (AU/ml). The influence of growth conditions such as incubation time, medium pH and incubation temperature on the production of bacteriocin was also carried out by the method described by Balasubramanyam & Varadaraj (1998) and Yildirim & Johnson (1998).…”

“…The predominant species in this study L. delbrueckii subsp. bulgaricus and L. amylovorus, may produce the bacteriocin as described in some strains according to the previous reports (25,26). However, the relationship between probiotic lactobacilli and intestinal indigenous lactobacilli is very complex; we must consider not only bacterial ecology but also physiological responses of the intestine, such as absorption and secretion, digesta kinetics and retention time.…”
