Determination and Characterization of Glycerophospholipids in Olive Fruit and Oil by Nonaqueous Capillary Electrophoresis with Electrospray-Mass Spectrometric Detection

Abstract: A nonaqueous capillary electrophoresis method with electrospray-mass spectrometric detection was developed to study the glycerophospholipid fraction in olive fruit and olive oil samples.
