Determination of Supply Pressure during Cutting Fish Using High-Pressure Water Stream Taking into Account the Cutting Place and Diameter of the Water Nozzle

Abstract: This work describes the research aimed at determining the value of the basic parameters of fish cutting on treatment with a high-pressure water jet. Assuming a constant feed speed, distance of the nozzle from the processed raw material, and spray angle of the water jet for six diameters of the water nozzles, the supply pressure value was determined. Supply pressure at which the water stream has enough energy to fully cut the muscle flap is also determined. The tests were carried out on samples obtained from ra… Show more

“…The water pressure varies according to the strength of the targeting materials and exhibits a different order magnitude [ 106 ]. By focusing on the rainbow trout, and fixing the stand-off distance and incidence angle, Kasperowicz et al [ 32 ] have investigated the effect of the waterjet pressure, nozzle moving speed, nozzle size, and nozzle geometry on the cutting performance. It turns out that, for good cutting quality, the supply water pressure changes with the size of carcasses and cutting sites.…”

“…Compared with knife cutting, waterjet cutting exhibited advantages in cutting efficiency and quality for food processing [ 31 ]. This method mainly utilizes the high pressure of the waterjet coming through a die with a certain shape to separate the workpieces [ 32 ]. To enhance the cutting performance, certain abrasives are added to the water [ 33 , 34 ].…”

“…High-pressure water treatment technology has been developed for more than 50 years. At that time, articles were published on the use of high-pressure waterjets to cut through various materials [ 1 , 2 , 3 , 4 , 5 , 6 ] and high-pressure waterjets with additives designed to increase processing efficiency. Ice particles are added to the high-pressure waterjet [ 7 , 8 , 9 , 10 ], along with solidified carbon dioxide particles CO 2 [ 11 , 12 ], or garnet, corundum or olivine [ 13 , 14 , 15 , 16 ].…”

“…The possibility of using a high-pressure water jet without any additives seems to be safe for metal substrate materials and plastic parts. High-pressure water jet has previously been used to process such delicate materials as fish muscle and skin [ 31 , 32 ]. The necessary jet pressure to completely cut through the muscle and skin of rainbow trout was determined.…”
