Development of a technology with an iodine-containing additive to produce kefir from goat milk

Abstract: Наводяться результати досліджень з визна-чення впливу йодовмісної добавки Еламіну в тех-нології кефіру із козиного молока. Встановлено, що йодовмісна добавка впливає на підвищен-ня рівня аміно-та жирних кислот у кефірі.
