Hop Resins and Beer Flavour Iii. Hop Resins in Beer*

Abstract: Additional evidence is presented that isohumulone A contains two components and that there are six isohumulones in beer. The significance of methods for the estimation of bitterness in beer is discussed; certain rapid methods give good correlation with bitterness and are excellent for quality control, though anomalies may occur. The beer components which originate in the various hop resins are assessed and in this connection the bittering ability of aged hops is shown not to be due to humulinone.

“…Panelists scaled the overall bitterness intensity of a given sample using a sliding bar scale (0 = none, 20 = extreme), and the scaling data were collected using Qualtrics. After assessing a sample, the panelists were instructed to rinse their mouths with a 0.1% pectin solution to aid in the reduction of bitterness carry-over 35 and then to rinse their mouths again with deionized water. Panelists were instructed to wait until all perceivable bitterness had dissipated before tasting the next sample.…”

“…7*5:4*1), we estimate that These are presumably the equilibrium proportions, and are in good agreement with estimates of the proportions of the two isomers made from the countercurrent distribution studies. 19 No significant difference could be detected (by proton resonance spectroscopy) between sam ples prepared on different occasions, and either distilled or not. these hydrogens have been exchanged for deuterium.…”

“…In a similar manner, tsohumulone A is resolved into two spots by reversed phase paper chromatography. 19 Thus, there is much evidence for the existence of two isomeric forms of tsohumulone A, although at present the separation of the two isomers on a pre parative scale, so that their properties can be compared, has not been reported. It should perhaps be mentioned, also, that hydrogenation of tsohumulone A leads to a crystalline tetrahydrotsohumulone.2»ls Differ ent preparations, however, show a con siderable variation in m.p., indicating that this compound may also be a slightly varying mixture of two isomers.…”
