This study aimed to analyze the antioxidant capacity and polyphenol content of the hard seltzer drink made with Tommy Atkins mangoes collected in the Santa Lucia canton of the Guayas-Ecuador province. To measure the antioxidant capacity and the concentration of polyphenols, the Ferric Reducing Antioxidant Power (FRAP) method and the Folin-Ciocalteu reagent were obtained, respectively. The results showed that the drink has a high antioxidant activity of 3964 µg/mL and a high polyphenol content of 1558 mg/mL. This study concluded that Tommy Atkins mango-based Hard Seltzer drink is a healthy choice for consumers, as it contains high levels of antioxidants and polyphenols with beneficial effects on human health.
