Microbiological evaluation of pequi (Caryocar brasiliense Camb.) preserves made from a typical Brazilian fruit

Abstract: The microbiological quality of preserves made from the pulp of the pequi (Caryocar brasiliense Camb.), a typical Brazilian fruit, was assessed. The total aerobic mesophilic and the yeast and mould counts in the samples suggest inadequate hygienic conditions during the processing of the product. Low levels of contamination by coliform bacteria and enterobacteria were observed; however, the presence of injured cells of these microorganisms was demonstrated. The presence of Staphylococcus aureus and sulfite-reduc… Show more

“…Agronomy Maringá, v. 37, n. 3, p. 367-374, July-Sept., 2015 JUNQUEIRA, 2007;TRINDADE et al, 2002) and their biotechnological applications in the agroindustry, such as biocontrol, food industry, textiles, waste treatment and enzyme production by microorganisms. The epiphitic microbiota can show cellulolytic and pectinolytic enzyme activities (FERREIRA;JUNQUEIRA, 2007;TRINDADE et al, 2002). When excreted by microorganisms, these enzymes cause the depolymerization of pectin and cellulose compounds and the subsequent release of simple sugars, such as glucose.…”

“…The fruits have a mesocarp rich in oil, vitamins, and proteins and contain many compounds of medicinal importance. The tree is also used by humans for food, the production of cosmetics and lubricants, and in the pharmaceutical industry (Araújo 1995;Segall et al 2005;Ferreira & Junqueira 2007;Garcia et al 2007;Khouri et al 2007). This plant is the main source of income in many communities (Leite et al 2006a).…”

“…Its fruits have an internal mesocarp rich in oil, vitamins, and proteins, and contain many compounds of medicinal importance. Not surprisingly, it is widely used by humans for food, production of cosmetics, lubricants, and in the pharmaceutical industry (Segall et al 2005;Ferreira & Junqueira 2007;Garcia et al 2007;Khouri et al 2007).…”
