Nugget Tempe Dengan Substitusi Tepung Kacang Merah Sebagai Pangan Kaya Zat Besi

Abstract: Tempe adalah makanan khas Indonesia yang terbuat dari biji kedelai yang difermentasi dengan jamur Rhizopusoligosporus. Tempe memiliki daya simpan yang singkat, sehingga membutuhkan pengolahan lanjutan untukmemperlama daya simpan. Nugget yang sering beredar di pasaran adalah nugget dengan bahan baku dagingatau ikan, sedangkan nugget dengan bahan baku tempe jarang dijumpai.
