Oil Droplet Coalescence in W/O/W Double Emulsions Examined in Models from Micrometer- to Millimeter-Sized Droplets

Abstract: Water-in-oil-in-water (W1/O/W2) double emulsions must resist W1–W1, O–O and W1–W2 coalescence to be suitable for applications. This work isolates the stability of the oil droplets in a double emulsion, focusing on the impact of the concentration of the hydrophilic surfactant. The stability against coalescence was measured on droplets ranging in size from millimeters to micrometers, evaluating three different measurement methods. The time between the contact and coalescence of millimeter-sized droplets at a pla… Show more

“…The coalescence of the binary droplets could be utilized to predict the demulsification process with multiple or enlarged droplets. Descriptions of the scaling of the droplet coalescence could be found in the works of Boxall et al [59] , Hamedani [60] and Leister et al [41] .…”

“…For the formation of GelMA droplets, a microfluidic device with glass capillaries was employed, as shown in Figure 4B. A detailed description of the equipment is provided by Leister et al [53]. The setup consisted of one outer and two inner glass capillaries (World Precision Instruments, Friedberg, Germany).…”
