The rise and fall of the New Nordic Cuisine

Abstract: This article provides a history of the New Nordic Cuisine* the ideology, the politics, the criticism, and the counterreactions to it.

“…In this paper, we utilize blog texts, interview, and participant observation to study a particular case of NNUB, the Finnish restaurant Chef & Sommelier (C&S), which served customers in Helsinki between 2010 and 2017.
