This study aimed to evaluate the application of good practices in hotel restaurants in Southern Brazil, relate these practices to the microbiological quality of the food offered, in addition to identifying contamination sources. The food and beverage sector of four hotels was evaluated by means of a checklist based on the Resolution 216/2014 of Agência Nacional de Vigilância Sanitária and microbiological analyzes. Surface, utensil, equipment and handlers' hand samples were collected for coagulase positive Staphylococcus and thermotolerant coliform count. Osolates obtained from these culture counts were compared by band profiles obtained by rep-PCR. According to non-conformities observed, only one hotel was rated as excellent in good practices avaliation. Some microbiological analysis exceeded the allowed limit for the analyzed microorganism count, revealing failure in the hygiene-sanitary process. Genetic similarities between some food samples and handlers' hands and utensils were identified. These results showed inadequacies in the process of food care and handling which may compromise the quality of food offered to custumers.
O objetivo deste trabalho foi apresentar considerações acerca das construções sociais de gênero e os sentidos atribuídos ao trabalho feminino a partir de algumas discussões trazidas por autores como Bauman, Giddens, Park e Sennett, entre outros. A escolha dos estudiosos acima decorreu do contato com alguns artigos, textos e obras, durante o processo de formação do curso de licenciatura em sociologia. Foi realizada uma contraposição do estudo destas teorias com o cotidiano do trabalho desenvolvido por mulheres.Percebeu-se que este foi um rico lócus para a observação e análise das construções sociais de gênero, bem como dos sentidos atribuídos ao trabalho feminino. As discussões trazidas nesse trabalho possuem em seu cunho, reflexões que permeiam aspectos relacionados à sociedade pós-moderna que possui características como a instabilidade, a fluidez e transitoriedade. This study aimed to evaluate the consequences of replacing growth promoter antibiotics by organic acids in diets of broilers. A completely randomized design was utilized, with 5 treatments (T1: negative control without antibiotics or organic acids; T2: latic, propionic and formic acids; T3: fumaric, formic, propionic and sorbic acids; T4: lactic, formic, fumaric and citric acids; T5: positive control, addition of antibiotic) and 7 replicates of 8 birds per experimental units. To evaluate de performance, the weight and feed intake were measured at different stages (1-21; 21-35; 35-42 day old). At 42 day old, 2 birds per pen were sacrificed with human methods to evaluate carcass yield, breast yield and leg yield. The results showed that organic acids have no influence on carcass yield and cuts. The performance should be better evaluated, because the experimental conditions don’t offer an enough environmental challenge for the additives (antibiotics and organic acids) can show their potential.
