Objetivou-se avaliar a qualidade microbiológica do peixe serra (S. brasiliensis) desembarcado no município de Raposa (MA) e do gelo utilizado na sua conservação. As amostras de gelo e de peixe serra foram submetidas às análises de determinação do Número Mais Provável (NMP) de Coliformes Totais, Termotolerantes e Escherichia coli. Para as amostras de peixe, realizou-se ainda pesquisa de Staphylococcus coagulase positivo, Salmonella spp. e Aeromonas spp. Aplicou-se aos pescadores um questionário com 20 perguntas referentes à manipulação do pescado. As amostras de gelo apresentaram qualidade microbiológica insatisfatória. O peixe serra encontrou-se contaminado por A. hydrophila, podendo veicular este agente ao ser consumido pela população.
Resumo O leite possui extremo valor na dieta humana e constitui um excelente substrato para o crescimento de grande diversidade de microrganismos, dentre eles o Staphylococcus aureus, frequentemente encontrado no leite cru, e que se destaca como um dos microrganismos mais prevalentes em casos de mastite bovina no mundo. Objetivou-se avaliar a sensibilidade de cepas de S. aureus isoladas de leite cru à antimicrobianos comerciais. Para isso, selecionaram-se antibióticos com base em pesquisas junto a estabelecimentos comerciais de medicamentos veterinários no município de Zé Doca, Estado do Maranhão, Brasil. Esses antibióticos foram identificados por associação à base de penicilina, estreptomicina, isoniazida e prednisolona (BPC), oxitetraciclina base (TOR), associação à base de penicilina e estreptomicina (MPP) e cloridrato de tetraciclina (TCA). Posteriormente, realizou-se contagem de Staphylococcus spp., com isolamento e identificação bioquímica das cepas de S. aureus as quais, em seguida, foram submetidas à antibiogramas com identificação de ce,pas produtoras de beta-lactamase. Os resultados demonstraram contaminação em todas as amostras por Staphylococcus spp., com contagens de 1,9 x 103 a 5,24 x 106 UFC/mL. Dentre os antibióticos testados, o TOR apresentou maior eficiência na eliminação ou redução de todas as cepas de S. aureus. Verificou-se que 50% das cepas de S. aureus isoladas produziram enzima beta-lactamase. Torna-se necessário a criação de medidas de combate ao surgimento de novas cepas bacterianas e atuação das autoridades públicas, fiscalizando a comercialização de medicamentos veterinários.
Background Mastitis is one of the major diseases in dairy cattle, as it causes great economic losses to producers due to the reduction of milk production and changes in the quality of the product. The disease is mainly caused by bacteria of the genus Staphylococcus spp., these microorganisms can express various virulence factors, such as biofilms for example. In herds with organic management, producers and technicians use unconventional ways to treat and control the disease, such as homeopathy. However, it is not known if this type of treatment is able to control pathogenic bacteria such as those of the genus Staphylococcus, of relevance to animal and human health. Thus, the objective of this study was to investigate the production of biofilm in vitro and its genes by Staphylococcus spp. isolated in the milk of cows treated with homeopathy, as well as the persistence of microorganisms in animals. Methods Ninety-nine isolates of Staphylococcus spp. from cows treated and not treated with homeopathy were identified by internal transcribed space-polymerase chain reaction and investigated for the presence of the icaABCD, bap, aap, atlE, and bhp genes and in vitro biofilm production using the adhesion method on polystyrene plates. The enzyme restriction profile was determined by Pulsed-Field Gel Electrophoresis. Clusters of S. aureus and S. epidermidis with three or more isolates had an isolate selected for Multilocus Sequence Typing. Results The frequency of S. aureus isolations was similar in treated and untreated cows, while 71.4% of the coagulase-negative identified were isolated in cows treated with homeopathy. The distribution of the operon ica genes was similar in animals with and without treatment, except for the icaD gene, more frequent in treated cows. Production of biofilm was associated with presence of one or more genes from the icaADBC operon. S. aureus revealed a greater diversity and greater dissemination in cows treated and not treated with homeopathy. Sequence Types ST1, ST5, and ST126 were identified in S. aureus. Conclusions The presence of biofilm-associated genes and the in vitro production of biofilms, combined with the persistence of clonal profiles of Staphylococcus spp. demonstrate other forms of control for bovine mastitis should be researched for organic production herds.
Fish are considered rich sources of nutrients. Health care throughout its production chain aims to ensure quality, minimizing the risks of transmission of foodborne diseases. In order to evaluate the microbiological quality of trahira fish (H. malabaricus), 40 samples were analysed for Most Probable Number (MPN) of coliforms at 45ºC, counts of aerobic mesophilic bacteria and Staphylococcus spp., identification of E. coli, Salmonella spp. and Aeromonas spp.. Analyses were conducted according to official methods, procedures, and recommendations. Microbiological results showed coliform values at 45 °C ranging from <3 to > 1.1 × 103 MPN/g, presence of E. coli in 14 (35%) samples, counts of mesophilic aerobic bacteria from 9 × 102 to 109 CFU/g and absence of coagulase positive Staphylococcus aureus. Salmonella spp. was detected in 2 (5%) samples, which is in disagreement with the standards required by the RDC Nº 12 of January, 2001 (ANVISA) regarding Aeromonas spp. In total, 36 (90%) samples were contaminated, 7 (19.4%) by A. cavie and 29 (80.6%) by A. hidrophila. The results of this research showed unsatisfactory hygienic and sanitary conditions of fish from the municipality of São Bento (MA), exposing consumers to the risk of foodborne diseases.
A pescada amarela (Cynoscion acoupa) e o peixe serra (Scomberomorus brasiliensis) são espécies com grande aceitação e consumo em municípios maranhenses, no entanto, poucas são as informações sobre sua qualidade e conservação no momento do desembarque no Estado. Objetivou-se avaliar atributos sensoriais e determinar os teores de bases voláteis totais (BVT) e trimetilamina (TMA) para as duas espécies de pescado, bem como verificar a contagem de bactérias aeróbias heterotróficas mesófilas em peixe serra. Constou-se na avaliação sensorial que 100% das amostras de pescada amarela demonstraram padrão de primeira qualidade e que 16,67% das amostras de peixe serra foram classificadas como de segunda qualidade. Todas as amostras apresentaram teores de BVT e TMA dentro dos padrões estabelecidos pela legislação vigente. Em 56,67% das amostras de peixe serra a contagem de bactérias aeróbias heterotróficas mesófilas apresentou intervalo de 3,3 x 10 2 a 8,5 x10 3 UFC/g, em 10% 2,7x10 4 a 1,2x 10 5 UFC/g, enquanto 33,33% não apresentou contaminação. Concluise que o peixe serra e a pescada amarela apresentam qualidade sensorial, microbiológica e química satisfatórias no momento do desembarque, portanto aptos para o consumo.
