Asap cair dari limbah kulit batang mangrove telah diproduksi menggunakan metode pirolisis pada suhu 400°C selama 6 jam. Selanjutnya asap cair diadsorpsi menggunakan kaolin yang diaktivasi secara termal pada suhu 500°C. Analisa GC-MS (Gas Chromatography Mass Spectrophotometer) menunjukkan adanya beberapa senyawa dominan pada asap cair yaitu 2-furankarboksildehid, 2-propanon dan asam asetat. Aktivitas antioksidan asap cair dianalisis menggunakan metode DPPH (1,1-Diphenyl-2-picryl Hidrazil). Asap cair limbah kulit batang mangrove sebelum diadsorpsi memiliki aktivitas antioksidan (IC50 = 1635,65 ppm) lebih kuat dari asap cair limbah kulit batang mangrove setelah diadsorpsi (IC50 = 3023,06 ppm). Nilai IC50 tersebut menunjukkan asap cair memiliki aktivitas antioksidan sangat lemah. Hasil uji toksisitas asap cair limbah kulit batang mangrove sebelum diadsorpsi (LC50 = 562.341 ppm) dan asap cair limbah kulit batang mangrove setelah diadsorpsi (LC50 = 46.625 ppm). Nilai LC50 menunjukkan asap cair bersifat tidak toksik (LC50>1000 ppm)
Asap cair mengandung senyawa asam, fenol dan karbonil yang dapat berfungsi sebagai antibakteri. Sifat antibakteri asap cair tersebut diharapkan dapat menjadi alternatif pengganti pengawet yang berbahaya bagi pangan. Tujuan penelitian ini adalah untuk mengetahui aktivitas antibakteri asap cair limbah kulit batang mangrove terhadap bakteri Escherichia coli dan Staphylococcus aureus. Dari hasil uji antibakteri terhadap bakteri S.aureus dan E.coli diketahui bahwa asap cair tanpa destilasi memiliki aktivitas antibakteri yang lebih baik dibandingkan asap cair hasil destilasi.
Liquid smoke has been successful pabricated from mangrove Avicennia alba shell by pyrolysis method at a temperature of 400℃ for 3 hours. Liquid smoke was purified by adsorption using activated kaolinite as adsorbent. The test results showed that activated kaolinite could bring down the rancidness to become odorless and the color of liquid smoke from dark chocolate to gray colour. The composition of the liquid smoke compound was determined by using the Gass Chromatography-Mass Spectrophotometer (GC-MS) consists of 2-propanone (CAS) acetone 25.79% and furan, tetrahydro- of 10.37% and carbamic acid, monoammonium salt (CAS) ammonium carbamate of 58.46% . The LC50 value of pure liquid smoke ranging from 1000 ppm is an indication that it is not toxic and safe to use for food preservation. Activity test against the inhibition of microbial growth in fish meatballs, showed that ability. The higher the concentration of liquid smoke, the better the inhibition of microbial growth. Based on the results, it can be concluded that the liquid smoke produced from mangrove Avicennia alba shell purified by the activated kaolinite is very promising as a foodstuffs preservative
