Nitrite ion has been determined amperometrically by oxidation a t a glassy carbon electrode. A flow injection analysis procedure using this detector has been constructed and some interferences assessed. One of the interfering species was found to be ascorbic acid, and the analysis of an extract of a cooked meat was found to give satisfactory results when ion-interaction chromatography, with amperometric detection, was used.
